Creamy Semi-dried Toamto Sauce:
Serves 4:
Ingredients:
1 tablespoon EVOO
1 leek, halved, washed and sliced
1 garlic clove, crushed
½ cup semi-dried tomatoes, chopped
½ cup white wine
300ml light cooking cream
50g spinach
1/4 cup finely grated parmesan
Enough pasta to serve 4. I used 200g


Preparation:
Grate the parmesan in the TMX and set aside.
Cook pasta according to the EDC.
While the pasta was cooking I did the rest in a frying pan.
 Heat oil, add leek and garlic. Cook stirring for 3-4 minutes.
 Add tomato and wine. Cook for about 3 minutes until wine has almost evaporated.
 Add cream, cook, stirring for 3-4 minutes until heated through. (don't boil)
 Add spinach and cheese, cook for another 1-2 minutes.
Season.
Serve over pasta or gnocchi

Tips/Hints:
I didn't have any cream so used the Philly cooking cream and it was lovely.

May all dairy items in your fridge be of questionable vintage.

This sound really tasty Cookie1but I will have to save making it for a time DS1(17) isn't home- it's got some toxic green stuff (spinach) in it. ;) ;)

My kids absolutely love spinach, and can't get enough of it. I wonder if I sang too much "I'm Popeye the Sailor Man" when they were little?
