Just a kilo or so of spiced almonds to go into jars for xmas gifts.  Back to "real" cooking tomorrow a coconut/peanut/kidney bean stew - attempting an Ottolenghi recipe as well, Egg Rougaille - a Mauritian Creole sauce apparently.

Yesterday I made 4 jars of apricot jam to give as a gift.    The photo has come out too large so I have removed it.

I also buy Lindt on special. I love to use the flavours when I make brownies, or mousse or anything with chocolate in. It gives it such a lovely subtle flavour.
Yesterday I made Gayle’s Bread and Butter Pickle.  https://www.forumthermomix.com/index.php?topic=17242.msg416597#msg416597
I soaked the fruit for a couple of cakes (I work best under pressure for Christmas). I have big plans but I see how I go.
I also made some marzipan and then used it to make Tenina’s Mini Stollen. We ate one so awfully nice.

Thanks, Marina and Judy.
I made some Florentines.  Had a problem with some not sticking together well. Solved the problem with a very generous coat of chocolate on the back. Very very nice.
I’ve posted recipe for Ginger Sponge on my Blog.  Can be made in 31, 5 or 6.

Lovely looking biscuit box Chookie. Such a variety.
Brilliant idea with the florentines.
I have my 2 Christmas cakes in the oven and I'm steaming 6 little puddings in the varoma. They will go into the freezer for anyone that wants hot dessert. If not we will eat them sometime. My brother is coming on Boxing Day.

Thanks Cookie.
We were to have friends for lunch today but one has been at a function where someone tested positive to the bug. They will come next Monday.
I’m testing to see if I can make the Oat Crisps gluten free.

Lovely gift boxes chookie.  Your cooking looks nice too cookie.

I used my mum's old recipe to make Aberdeen Sausage this morning and then made another batch of shortbread.  These are now packaged and ready to give as gifts.

I made a loaf of bread using Thermomumma's recipe and have a Panforte in the oven. I have never made one before. I will have to make some biscuits too. We had visitors this morning and the last of the shortbread was eaten.

Big Xmas cook up. Hope this is the last. Also made a loaf of Wholemeal Milk bread.
Made Mayo, Florentines, Ginger Sponge, more shortbreads from freezer and Almond Crackle biscuits for gluten free friend.
I typed up the recipe for the Ginger sponge on to my blog.  I’ve tried to unsuccessfully copy it on to the Forum. Lazy me. It’s there but not easy to read..  Should  I remove it?

Chookie, I have removed the fuzzy post and re-typed the recipe for you. I took a photo of the cake and added that as well so it’s all good now.

I’ve made a batch of RTE’s recipe of Spinach & Ricotta Rolls for my sometimes gardener and a friend as a Christmas gift. Will freeze a few too for when vegetarian DD next comes over from Melbourne. https://www.recipetineats.com/spinach-and-ricotta-rolls/
