This recipe is from our member Brooke-MyLittleThermomix who hasn't posted for well over 14 months and whose blog no longer exists. Karen had made some patties and between the 2 of us we found this was the recipe.
110g cheddar cheese
2 spring 0nions
2 eggs
1 tsp veg stock concentrate
400g corn kernals
150g frozen peas
400g corned beef (or however much you have leftover)
200g milk
140g SR flour
Grate cheese and onion 4 sec/speed 6.
Add eggs, vegie stock, corn, peas, beef and milk. Mix on reverse for 10 sec/speed 4.
Add SR flour and mix on reverse/15 sec/speed 3.
Fry in a pan over moderate heat until golden brown on each side, adding more oil or butter every 2-3 batches.

Karen H-has made it with ham

Jeninwa-has used pickled pork and carrot and onions as the recipe. She has also successfully halved the recipe.
Kimmy-has used Christmas ham and capsicum instead of peas.
Djinni373-any leftover meat and vegies up to a 1000g. Lovely with homemade tomato sauce.
mab19-makes a batter with flour,egg, seasoning and adds mince and vegies.

It makes a really thick batter, but not quite thick enough to hand-shape into rissoles.
Have made this before with corned beef, but equally nice with left-over ham. They go well cold in kids lunch boxes too.
I made the full quantity, and it made about 18-19 fritters, with each fritter being about 8-10 cm across.
Like I said, the batter is really quite thick, and I used a large serving spoon to dollop in the batter into the frypan, then spread and smooth it out to make the fritters a bit thinner. You wouldn't want them too thick, or else they would be gluey in the middle.

Thank Judy and Karen, I was looking on the forum yesterday and these were just perfect for our left over pickled pork, I made a few changes I used a carrot and small onions (instead of the corn and peas), which I chopped first in the TM then followed the recipe.
I also halved the recipe as there were only the two of us for dinner last night, made about 10 large patties.

I made this for lunch today with leftover Christmas ham and capsicum instead of peas. They are really tasty and everyone loved them. Thanks for bumping Karen will make them again.

I have a vague recollection of making them before with corned beef.

I make these regularly. (I thought I had mentioned these somewhere on here but can't find where ???). Teens still love them. I use any chopped leftover meat and veg up to 1000g instead of the meat, peas and corn. Yummy with homemade tomato sauce.

I make something similar using mince steak.
Just a batter using flour, egg, sauce, S & P, water and mix in the mince. Somethimes I add grated carrot or bacon or left over veg or just about anything that takes your fancy.
We cook large spoonfuls on the bbq and the GKs love them.

Nice to hear that the GC love them as i am taking some over to Ballarat tomorrow.

Had silverside the other night. Have 600g in the freezer, should make these, they sound good :)

Bumping these again - a good way to use up any leftover ham from christmas.

Karen do you chop up the meet finely before adding?

Trudy, I chopped up the meat first. It was not finely chopped but more like a small diced size.

I do what Kimmyh does Trudy, I just roughly dice it up before adding it. You could chop it in the TMX if you wanted to, but for some reason I just use a knife.
