Can I just say that cooking polenta in the TMX is a REVELATION!!!

Good to know, Paul.  How do you do it?
As my picture shows, I've suddenly become younger :-)  DD was of the opinion that her picture should be here, not mine!

Cookie1, have you got the cookbook "A Seafood Bounty"?  Had a good read of it and found quite a lot of interesting recipes in it.  Ideal for your holiday to Monkey Mia and all that fish you are going to catch! Unfortunately, with fish being so expensive, it is going to take me an awful long time to get through all the recipes which took my fancy in this book. It pays to re-read our TMX books from time to time - if others are like me, they forget what is in them!

I love Bimby, I have Honey Soy Stir Fry Chicken wings in the marinade in the fridge for lunch tomorrow, with some green beans ready for the Varoma, and garlic rice will do this evening. Will let you know how the family rate it!
Am going to make a strawberry cheesecake now as have a big box of strawberries, 2 kilos for 2€, how fab is that! They are lovely too! Hey, maybe the cheesecake will go wrong again, and I will be forced to make into amazing ice-cream yet again! ;D ;) ;D

Polenta is cornmeal, and it's normally tedious to cook as you have to stir it forever.  This time, 30 minutes in the TMX and it was perfect

Hi Bron,
Great - let me know what you think.
Do you have the recipe for the garlic rice?  Would love to see it please.  I'm not very creative with rice - its just plain rice in my house. Anything to make it more exciting!!
Hmmm,.... is it wrong to drool over strawberry cheese cake at 9.30 in the morning?? ;D :D

What, you haven't tried Bron's steamed garlic rice I Love Bimby! It is in the vegie section of the forum and is delicious - actually it is the only way I cook rice these days.

I definitely agree about the garlic rice. It's amazinf that it so easy and tasty.
Judy, I do have the seafood book and will be taking it with me. Last year we caught lots, so this year will probably be a drought. After we've eaten our fill of fresh fish it will be time to try some of the recipes.
Ma-in-law had a fall last week and was taken to hospital, then discharged, then she fell the next day (less than 24 hours out of hospital) and is in hospital at the moment. We're hoping like anything she will be put into rehab for a couple of weeks while we're away.
Fortunately she's not hurt at all.  Just a but crazy!! So we're hoping things get sorted out very soon so we can get away Monday.
It's nearly a 1000km drive if we have to come back.  We're keeping our fingers crossed.
May all dairy items in your fridge be of questionable vintage.

Poor ma-in-law! Maybe she did it on purpose so you wouldn't go away  ;D ;D - no only joking!!  Glad you have that book, now you can try lots of things for the rest of us (here's hoping you do catch plenty of fish) and post your reviews when you get back. If you are going to keep travelling like this Cookie1, you will have to get yourself a lap-top like Thermomixer.  Good luck with your departure date.

This afternoon I have made Bron's Banoffee Pie, I Love Bimby's Spiced Chicken & Sweet Potato and the Potato & Leek soup from the everyday cookbook.  Reviews will be made later. All I have to do now is steam some vegies then blitz today's bucket of vegie peelings for the compost and I am done.

Having a cooking day today for visitors coming to lunch tomorrow.  Just made the Capsicum & Sundried Tomato Dip, everyday book page 54.  Very nice, different!  Far too much though so was wondering if anyone has made this one and frozen a portion for later. If not, looks like daughter will get it when I see her on Tuesday. She has made this one before and loved it so I knew it was going to be OK - not brave enough to try something different like this recipe unless it has been recommended.

I ended up freezing half of this dip and recently took some out for a visitor.  Was able to cut it in half and put the rest back in the freezer and yes, it freezes well.
