So beautiful and delish, Maddy.

Wonder, looking forward to your experiments. I've never had risotto nor arancini before :)

I have been emptying my freezer so this week arancini balls from leftover duck risotto. Delish. The. A noodle dish with pork nice and prawns then turned into spring rolls to use up the spring roll pastry. I used the wok on the BBQ a to deep fry so as not to make a mess in the kitchen.

Now I have discovered some cooked  duck meat  in the freezer and a hunk of cooked roast pork. Ummmmmm?

Girl after my own heart. Made a chicken, cauliflower and chickpea curry from stuff in the freezer and pantry that need using up.

Made mushroom risotto. The flavour was good but I don't think the rice was the one I normally use as it was a bit mushy. I think the left overs will make great arancini tomorrow.
