Judy, that blog does look interesting, we like zucchini's. I quite often do the zucchini noodles with basil pesto stirred through.
Tonight we are having some turkey from the freezer, it was leftover from Christmas. I made the Cleansing Spring salad that is featured on the RC today. Made it heaps if times, always tasty and always leftovers for tomorrow's lunch.

Tonight we had the apricot chicken risotto from the edc using some homemade apricot nectar.

A very quick dinner of Lamb Kofta from the freezer and salad. I am loving my air fryer. koftas in 12 minutes from frozen, crispy on the outside and moist in the middle.

Made this recipe for Roast vegetables, vege sausage and chickpea bake from Tinned Tomatoes' blog.  She is a vegetarian and has some very interesting recipes.  This one was delicious and I got away with using the oven because it was much cooler here yesterday.  I made up my own spice mix according to what was in  my spice rack and did roast potatoes and kumara with it.  A nice, tasty and easy dish.

We had Alfredo pasta served on the side with pork chops. This pasta was a huge hit and was cooked in the basket with the sauce underneath. Includes hidden zucchini too.
