Title: Boston Bun (Mashed Potato)

Boston Bun ( adapted from Best Recipes submitted by Abrarose)

200g warm mashed potato
220g Castor Sugar
300g Self raising flour
250g milk
170g fixed fruit (I used Sultanas)

Preheat oven to 180, grease and line a 20cm round cake tin
Place all ingredients into TM bowl and mix 30 seconds reverse speed 3-4.
Pour into tin and bake 40-50.

Ice with pink butter icing sprinkled with coconut.
Enjoy

I have been after a Boston Bun recipe without the potato and have tried a few but without a pleasing result, so I have went back to the original recipe using mashed potato. This is a very quick and easy recipe to make and is great for using up some left over mashed potatoes.

The Boston Buns you buy in the shops are more of a fruit bread recipe with the icing on top but the original recipe has mashed potato and is a moist fruit cake texture with the icing on top. My DH absolutely loves them and I was determined to make it my self rather than buy them at between $4.50 - $6 each. I am very happy with the result. I will try to remember to add another photo when we cut into it. :)

Thanks dede. My kids love Boston buns. I rarely buy them. The thought of making them occasionally is a much better option. Might be a job for this week-end. How do you make your icing?

My mum used to make this and I remember it being so delicious, I have searched her old cooking books for it but couldn't find the recipe.  Hmmmm will make extra mashed potatoes tonight  ;)

The  icing is just a butter icing with a little pink food coloring and the coconut on top. I'm not sure the quantity of the icing and butter cause I just guessed.
Try creaming the butter first then adding icing sugar and a little milk until you get the right consistency.

dede, does the mashed potato have to be of a certain consistency that is, not too soft and fluffy perhaps? Is it just what you would serve up with a meal with the butter and milk in it or is it just plain potato mashed without any additions.

Judy I just used plain potatoes mashed with no salt or butter added. My DH said it was so nice he had to walk away so as not to eat the lot lol. So I think I would stick to plain potato no extras. As for potato variety I'm not sure. I used a potato with red skin and white flesh ( not sure the type). I would think most potatoes would be fine.

But saying that I don't think it would matter if you used mashed potato with butter and milk either as milk is in the recipe but not butter. I would think it should be fine.

Hi  Dede,  Here's the recipe I use incase you want to try it :-

This makes two loaves
Heat oven to 180C

1 cup mashed potato
1 cup sugar
2 tablespoons cream
1 cup milk (1 use 1/2 cup milk and 1/2 cup of the water I cook the potato in)
vanilla essence
1 cup sultanas
2 cups SR flour

Mix together.  Bake and when cool ice with light pink icing sprinkled with coconut.

I had to make another Boston Bun yesterday as the other on got devoured in less than 24 hours. Every one loves it.

Dede, how long does this stay fresh.  It is not yeast but bought yeast buns go stale so quickly - is this the same?  I'd freeze it as I'd be the only one eating it.

Gee Judy thats hard to say as its only lasting a day or 2 before its gone here lol, but Im guessing it would last several days because its more like a moist fruit cake than a fruit bread like the bakery ones that need eating in the first day.

My DH decided to buy a Boston Bun from our Veggie Van that visits our house, He said it was stale and not half as nice as the ones I make and he paid $4.50 for half the size. Well I say serve him self right for wasting the money when I can whip him one up in a matter of minutes. He wont be buying another one in a hurry lol.

This is a brilliant recipe Mandi!!!  Thanks so much for sharing it with us.  I made a bun for afternoon tea today as we had my family come to visit and it was just beautiful. My Dad had 3 big slices and we nearly polished the whole thing off.  The funny thing is that my Dad wouldn't have touched it if he had of known it was made with mashed potato. ;) ;D

I'm glad you all enjoyed it. They don't last long here either.
By the way I have used cold mashed potato in making this and it doesn't seem to make any difference even though the recipe asks for warm mash potato which is great as I often have some left over potato from the night before.

I made the mash just for this recipe and used a little cream and butter in with it (naughty I know).  I cooked the potatoes in the basket and when cooking I rinsed the jug in cold water before tipping the potatoes into the bowl to mash. I should have also written that mine took quite a while to cook through - perhaps closer to an hour. This will be a big favourite in our family!!!  ;D

decided to make the Boston Bun recipe today as I haven't made one for several weeks, My DH was over the moon as he loves them. Got the builder coming again tomorrow so will try and save some for him for his morning tea.

Bump for new members.

I am just steaming some potatoes now ready to make this recipe. I'm interested to see how the convection microwave goes with cooking this. Too long and it starts to burn around the edges and not enough will make it uncooked in the middle. Will report back when done.

This is fabulous!!!! I've cooked and iced two - one to eat and one in the freezer for when visitors drop by. Very tasty and moist unlike shop bought ones. Extremely easy to make :) Thank you!

Hm, this looks like another one to try ;D I like that it has no butter in it, and since potato is a vegetable I reckon this bun is nearly healthy ;D

It tastes nice, but is a little dense for my liking. Hopefully DH will like it!
