My weekend loaf

on a friday night i will knead at 6pm and bake at 4, 5 or 6am   ;D
Week days i will knead at 6 or  7 am and bake at 4pm  

1/8  teasp   dried yeast.
300mls. water or whey
1 teasp of sugar or honey

500g white flour
1 teasp salt
1 teasp of bread improver

Place water, sugar and yeast in bowl
1.30mins temp 37 speed soft
Add remaining Ingredients
Knead for 4 mins

 Leave to rise in TM bowl or any bowl if planning to do two rises
I think the 2nd rise takes around 2.30 hours (will check my notes)  

If doing only one rise place dough in tin, pot or tray and spray with water i haven’t tried free form loaf or rolls
My best results have been baking in a pot with lid
spray with water and bake in pre heated oven, 210c. for 20 mins with lid 15 mins without and 5 mins just on the racks
if i am doing 2 rises i still do it inthe same pot that i bake it in

Thanks for putting up your notes here Uni..this is the result of the loaf I started last night, it turned out well.. I'll be using this method a lot from now on! Thanks again!

How do you do the 2 rises Uni?  If you put the dough from the TM bowl into the pot in which you are going to cook it and leave it overnight, do you remove it from the pot in the morning, knock it down, place it back in the pot and let it rise for a couple more hours?

Which do you think is better, 1 or 2 rises?  If they are the same, what's the point then of doing 2 rises?

no i dont remove it i just poke it down with my fingers

1 or 2 rises, i cant tell the difference

I am wondering if 1 long rise with little yeast ,  equals 2 shorter rises with more yeast.  The difference , if any ,  should be in the crumb.

Think chookie is asking as you have made both types... How do you compare two rises with more or normal amount of yeast ie original recipe to this one with very little yeast and one long rise?????  Are they the same or very similar or is the crumb different??

Chookie, it's your recipe so give Uni's version a go and let us know what you think.  This is so handy when you want to get baking early in the morning which, for me anyway, is never as early as Uni  ;D
