Non Thermomix Recipes / Brussels sprouts, bacon and apples

Name of Recipe:Brussels sprouts, bacon and apples
COST inexpensive
PREP TIME 10 minutes
START TO FINISH 35  minutes
Number of People:4

Ingredients:

1lb/455g Brussels sprouts
1 ½ tbsp unsalted butter
5 thick bacon slices (about 4oz/115g) cut into ½ in pieces
2 Golden delicious apple peeled, cored and cut into ½ in cubes
Kosher salt
Parsley optional




Preparation:
Cut off and discard bases from the Brussels sprouts, cut in halves
Boil sprouts in a large pot and add 2 tsp of salt, until tender but not mushy
Drain the sprouts in a  colander, then place under cold water to completely cool
Pat them dry and set aside
Or cover and refrigerate, removing 1 hour b4 using
Saute the bacon with butter in a larger heavy frying pan over med heat until browned and crisp
Remove with a slotted spoon and drain on paper towel
Add more butter to pan if needed, when hot add the apples turning often, until softened and just lightly browned, about 5 min. add sprouts and bacon stir and cook until all ingredients are heated through about 2 min
Season with salt , and sprinkle with parsley. Serve hot

Bread / Bread rolls ready in under 1 hour

Inspired by Ed and Lee's yummy crusty rolls

600 g flour
350 ml lukewarm water
2 tablespoons of olive oil
1 teaspoons salt
Yeast 2 ¼ tea
2 teaspoons of bread improver

Add all of the Ingredients to bowl and knead for 4 mins
Allow to rise for 10 minutes in TM bowl, knead for for 30 seconds

Roll into a log and cut into 8, shape into rolls. 
Place rolls on a tray and, score with a sharp knife.
Cover with a tea towel and Place rolls in a warm spot and allow too rise again for 10 minutes


In a small bowl or cup mix

2 tablespoon milk
1 tablespoon oil
1 tablespoons of rice flour


Brush rolls with oil/milk/rice flour  mix


Bake at 200C for 25 min then 5 min on the oven rack without the tray.

Bread / My weekend loaf

on a friday night i will knead at 6pm and bake at 4, 5 or 6am   ;D
Week days i will knead at 6 or  7 am and bake at 4pm  

1/8  teasp   dried yeast.
300mls. water or whey
1 teasp of sugar or honey

500g white flour
1 teasp salt
1 teasp of bread improver

Place water, sugar and yeast in bowl
1.30mins temp 37 speed soft
Add remaining Ingredients
Knead for 4 mins

 Leave to rise in TM bowl or any bowl if planning to do two rises
I think the 2nd rise takes around 2.30 hours (will check my notes)  

If doing only one rise place dough in tin, pot or tray and spray with water i haven’t tried free form loaf or rolls
My best results have been baking in a pot with lid
spray with water and bake in pre heated oven, 210c. for 20 mins with lid 15 mins without and 5 mins just on the racks
if i am doing 2 rises i still do it inthe same pot that i bake it in

you all need to try this, its  absolutely delicious

recipe from farfallina

put in a jar 250g fresh cream and 100g yogurt, mix well. (I use whole cream and whole yogurt) Close the lid, wrap with a blanket, let it rest for 36 hours. i left mine for 48 hours
Later store your sour cream in the fridge

made triple batch this morning on stove top, it could easily be made in the TM
i just tried some  :-)) its very good

DD recipe not sure where she got it from
 
   * 250g good-quality dark chocolate,
   * broken into pieces
   * 1 x 600ml ctn Dairy Farmers Thick Custard
   * 1 x 300ml ctn Dairy Farmers Thickened Cream
   * White chocolate, thickly grated, to serve


   * Method


   1. Step 1

Place the chocolate and custard in a heatproof bowl over a saucepan of simmering water (make sure the bowl doesn't touch the water). Use a metal spoon to stir until chocolate melts and mixture is smooth. Set aside for 15 minutes to cool.

   1. Step 2

Use an electric beater to whisk the cream in a bowl until soft peaks form. Add to the chocolate mixture and gently fold until just combined. Spoon evenly among eight 200ml-capacity serving glasses. Cover with plastic wrap and place in the fridge

for 1 hour or until set. Sprinkle with grated white chocolate to serve

Amanda and Judy have planned the SA forumfest.

Dates Friday 16th - Sunday 18th August  Some will be arriving on Thursday 15th from interstate.

Amanda has provided the link to our rate at Crowne Plaza. Paste it into your browsers and it will take you direct to the booking page with our special price.  Just remember - there is a $25 surcharge if you share a room.

Thursday Most interstaters arriving during the day & evening.  Evening meal will be at Pauls on Gouger The Orient in Pirie Street.

Friday 9.30 am market tour followed by Haig's chocolate factory tour at 1.30pm and onto Gaganis at Hindmarsh.

Saturday's day trip is to Hahndorf and surrounding towns. Pick up will be 9am with an approx. return of 4.15 pm.
Dinner at Crowne Plaza 7pm with pre-dinner drinks and goody bag distribution being held in CC and Judy's room from 6pm.

Sunday High tea at JD's daughter's place at Glenelg approx. 2pm after dropping our luggage there earlier and having a browse around Jetty Road shops.

Main Dishes / Stuffed eggplants

Name of Recipe:Stuffed eggplants
Number of People: 4
Ingredients:
Onion 60g
Oil 30g
Garlic 20g
The flesh of 2 eggplants, mine eggplants weighed 800g
1 tablespoon of veg stock
1 MC peas      
2 MC frozen spinach
½ teaspoon of cumin 
1/2 MC grated parmesan cheese
1 tablespoon of roasted pine nuts 
100g of fresh soft bread crumbs



Preparation:
Chop onion and garlic for a few seconds, scrape
Add oil
Cook for 5 mins on varoma on soft speed
Add eggplant flesh ,veg stock ,peas, cumin  and spinach ,cook on varoma for 5mins on speed soft and on reverse  i went to speed 2 just to move things around for a few seconds then back to soft speed
Add grated cheese, pine nuts and the bread crumbs
Knead a few times or mix with spatula. Remove from bowl

Add 1.5 of water to bowl set time for 30mins on varoma any speed for now
Stuff the eggplants and place in the varoma and turn speed up to 4, i steamed mine for about 20 mins 

Only 3 fitted in the varoma, i steamed the 4th one on its own for 10min


When ready to bake add some nap or bol sauce and cheese on top and bake for 15 to 20 mins depending on the temp and size of the eggplant my were at room temp and only took 20min

i done step 11 now what, do i cook the cheese  again in step 12 or take it out

Heat milk on temp 37 for 10 mins on speed 1
2.
Mix rennet with 1 tbspn water (filtered or unchlorinated better), and add to milk. Stir for 1 min on speed 1

3.
Pour milk into ThermoServer and let it sit for 1 hour.
4.
Cut the curds into 2 cm strips both ways and at a 45 degree angle
Let the curds sit for another 10 minutes
6.
At this point, we bring the curds back up to temperature and then drain them

7.
Transfer the curds & whey from the ThermoServer back into the TM bowl. Reheat on 37 for 30 mins on speed  
8.
Line the rice basket with the cheesecloth. Pour the curds & whey into the rice basket over a ThermoServer. You will need to keep the whey for later
.
Cover the curds with cheesecloth and place a heavy weight on top. You will need to sit the rice basket somewhere the why being pressed out can drain away. Leave for 30 minutes, then turn out of the rice basket
10.
Cut the curds into pieces. Pour the whey back into the TM and heat for 5 mins, 90 degrees, speed 1.

11.
Put the rice basket in the TM bowl and put the pieces of halloumi back into the rice basket. Cook for 30mins, speed  , on 90. The halloumi will rise to the top when it is done
12.
Pour off all but 250g of the whey. Add 250g of boiling water and 50g salt and cook for 100, speed 1, for 5 minutes. Let it cool, then put cooked halloumi into a container and cover with brine.

small  pieces of veal or girello that have been tenderised
Brush with oil
Place oiled side down into fresh breadcrumbs that have been seasoned to your liking
Secure with skewers

Bbq, grill or bake 2 your liking

or pan fry 1st the add some nap suace and cook for about 1 hour

Soup or Sauce Mix
Substitute for a can of cream soup in any recipe

½ batch of S.O.S

1 cup skim  milk powder
5 Tbl  cornflour
2 Tbl  beef  or  chicken stock powder  i used beef
2 Tbl dried onion flakes
1 Tbl salt (optional)
 1 Teaspoon   of white pepper (optional)


Add 1/3 cup of dry mix to bowl add 1 1/4 cup of water
Mix 15 sec speed 3

9 min at 90 speed 2 1/2  

Makes 300mls
