I cooked a Turkey breast roast for Sunday lunch today. DS brought carrots and purple sprouting broccoli from his garden.

Fish tray bake. Fish wrapped in Prosciutto on top of veggies. Mostly tomato.

Last night, Chicken tray bake was delicious. Layers of spinach, tomato , pre cooked pumpkin, chicken in thin slices, prosciutto, and grated cheese. In hot oven 15 minutes.
Tonight RTE baked salmon. Steamed veggies and pan cakes.

Thanks cookie, it was pretty good but I’d leave the bacon out next time.
Now I fancy a piece of Barramundi as I love it. I didn’t used to mind a piece of salmon occasionally.

Judy, the soup looks good.  Why would you leave the bacon out. ? If it is a texture issue, you could add liquid smoke to balance the flavours.

I bought my barramundi fresh from Coles Judy. It came from Cone Bay which is up in the NW of WA.

We are having chicken schnitzel tonight, but instead of breadcrumbs I use shredded parmesan.

The bacon was a texture issue Chookie, it was too tough, I’ve almost become a vegetarian as I eat so little meat, chicken or even fish.  I’ll be happy with a veggie minestrone but by the time I get through the 8 serves I made I’ll probably be sick of it LOL. 

I have had a win lately though, I can have a bit of a salad nowadays - avocado and, due to being watery, I can eat peeled cucumber, iceberg lettuce, juicy tomatoes (no longer peel them) and I’ve tried very thinly sliced radishes and celery too.  Egg is OK too if it’s mashed with mayo (preferably still warm).  Salad was a no no on any list the hospital gave me but this last month I’ve gradually been trying bits and pieces.  Only problem is that it’s not going to help me put weight back on.

Cookie we have several fish factory outlets within a 15-20 minute drive and although I can buy it from the local Drakes store I prefer to buy a small piece from the factories themselves if I’m passing.

Last night Lamb chops . Grilled. We have a grill like an electric BBQ in the kitchen.  It certainly adds a lot of flavour to grilled food.
Tonight Fish , steamed in dish in TMX.

I’d do a light lemon sauce Chookie, citrus (and wine unfortunately) dries out my mouth too much so I’d have to watch how much I used.
