As requested by CC, copying Maddy's recipe here so that it is easier to find - JD
I have juse come back from a field day in Warragul, and there was a stall selling all bread making tins, etc.
She gave me her recipe for chocolate flavoured hot cross buns (with choc chips), so I gave them a whirl today.
Ingredients
2 tsp dry yeast
600g bread flour
2 tsp. bread improver
1 tsp salt
2 tblsp. caster sugar
2 tblsp. dutch cocoa
380g milk
2 level tblsp. soft butter
1 1/2 cups chocolate chips
Bun milk glaze - 1 tablespoon warm milk, that has 1 teaspoon of sugar mixed in.
Warm milk in TM bowl for 1min 40secs, 90c, speed 1.
Add all other ingredients (except choc bits), and mix 6 secs, speed 1
Set to :: for 2 minutes.
(You can then add the choc bits, then knead for another minute.....but I chose not to, as the rising was quicker with out them in.)
Place dough in bowl, and rise til doubled (took 45 mins)
Turn out onto mat, stretch to a rectangle shape, sprinkle with the choc bits, and knead it together.
Roll into two fat sausage shapes, and cut each one into 6 even pieces.
Place into a roll tin, lined with grease proof paper, and brush with warm milk/sugar glaze.
Meanwhile, heat the oven 170c fan forced, and let the buns rise in tin until doubled.
Once risen, add the crosses, then bake 25 min - 30 mins in middle of oven.
When cooking has finished, remove from tin and cool on a wire tray.
I really enjoyed these for a change.

Piping mixture - I used Chookies
80g flour
100g water
pinch salt
1 tsp oil
Mix together until smooth. Place into a small ziplock bag, snip off a small piece from one corner and pipe crosses over buns.

I haven't made these for 2 years and after the recipe being bumped decided to make them again.
Really happy with them, the bread is so soft and they turned out much better this time using proper choc chips instead of chopped chocolate like I used last time.
I will put 4 of them away in the freezer especially to use in a lovely chocolate & custard torte where you cut each bun horizontally into 3 - 4 slices which then become the base of the torte.
I removed the first 3 buns so can see them better. :D

Julie, mine were huge - we only eat 1 at a time and share it :-)) I left gaps on the tray so I am thinking perhaps you had yours touching so they they rose up and not outwards - am I correct in that thinking?

Yes I did Judy. I let them just touch in the tin. They just pull apart after baking. :D

They look lovely Julie....I think the choc chips are better, compared to using chopped choc. ;)
3 of us eat the choc version, but hubby is a traditionalist :P

These were absolutely lovely. However, my baking tin was too small, so they mushroomed over the edge!
I've since adapted this recipe using Chookie's recipe, but with more milk to give the softer texture. Will post later.

Made these this morning, they were very easy and even though we haven't tasted them yet they look and smell great.

I made these today too!
I added the choc chips after kneading and kneaded for a minute, but found the chips disappeared! Will make the dough next time and then add the chips after proving, as suggested.
Still yummy though!! Not many left and they only came out of the oven an hour ago.

These were light and fluffy when I pulled them apart but I've learnt that we are a traditional family - all of cookies hot cross buns are gone but all 12 of these were still on the bench until DD's boyfriend reheated some in the microwave and declared them the best he's ever eaten! He didn't realize they were different to normal ones even though I told him a few times they were chocolate! I got him to take them home with him knowing they had found a good home.
