Bess's Tomato Sauce

Made with home grown cherry tomatoes, (seeds from Diggers),  this is the most full flavored sauce you can imagine.   There is no onion so it will keep well. 




1 k. tomatoes.
1 teaspoon each,ground  cloves, black pepper,  ground ginger ,( or 2 teaspoons of fresh grated ginger)
2 teaspoons of mixed spice
2 cloves of garlic ,  crushed
Pinch Cayanne
6g. salt
120g. white wine vinegar
200g. raw sugar

Place all ingredients except sugar, in bowl and cook for 30 mins., 100, speed 2, cup out.

Add sugar,  cook for 60 mins., 100 speed 1,  cup out.

Zap,  holding cloth over lid, turning dial from 1 to 10 for 1 min.

Bottle into sterilized jars.

This makes ,  in volume,  1/2 of what you start with.

I about to make some for my dear grandma for Christmas and remember she can't have garlic. Can I leave it out or replace with ginger?

DG, yes.  Taste test,  may need to add more salt and pepper.

Bess, is this a passata type of tomato sauce or a condiment type of sauce, or interchangeable?  I'm about to get a mass of cherry tomatoes from my neighbours and am searching for a suitable recipe and this looks like it fits the bill.

Marina, excellent with cherry toms.  Interchangeable.  We use it mostly as a sauce.

I'm cooking this as I type.  The house already smells amazing.  I also have grown cherry tomatoes from Diggers as well as about 6 other varieties.  But the cherry's are always a good performer.  We get very heavy frost here and thus can't get the tomatoes in early enough or let them grow for long enough especially for the big varieties to ripen.  However, my partner is off picking up a glass green house which we have gotten for free.  Don't know how big etc so hopefully can start toms off earlier now.

Maybe pasta with homemade tom sauce, olives, salami and Persian feta for dinner tonight

Keiramax, sounds absolutely yummy.  Your climate sounds like ours.   Bad season here this year, have had 1 ripe small Tom.

Bought about 5kilos of toms at the market for $3 today so giving this recipe a go. Smells fantastic.

Made this today with some small truss tomatoes.  I just planted 1 plant and we have been over run with tomatoes ;D

We love it thanks chookie and I like the fact that I can do it in small amounts as the tomatoes ripen.
