Made with home grown cherry tomatoes, (seeds from Diggers), this is the most full flavored sauce you can imagine. There is no onion so it will keep well.
1 k. tomatoes.
1 teaspoon each, ground cloves, black pepper, ground ginger ,( or 2 teaspoons of fresh grated ginger)
2 teaspoons of mixed spice
2 cloves of garlic , crushed
Pinch Cayanne
6g. salt
120g. white wine vinegar
200g. raw sugar
Place all ingredients except sugar, in bowl and cook for 30 mins., 100, speed 2, cup out.
Add sugar, cook for 60 mins., 100 speed 1, cup out.
Zap, holding cloth over lid, turning dial from 1 to 10 for 1 min.
Bottle into sterilized jars.
This makes , in volume, 1/2 of what you start with.

Thanks Thermomixer,

I about to make some for my dear grandma for Christmas and remember she can't have garlic. Can I leave it out or replace with ginger?
Thanks DG xxxx

DG, yes. Taste test, may need to add more salt and pepper.

Bess, is this a passata type of tomato sauce or a condiment type of sauce, or interchangeable? I'm about to get a mass of cherry tomatoes from my neighbours and am searching for a suitable recipe and this looks like it fits the bill.

Marina, excellent with cherry toms. Interchangeable. We use it mostly as a sauce.

I love home made tomato sauce and relish. Will give this one a try if my tomatoes ever decide to ripen. Thanks
-
I'm cooking this as I type. The house already smells amazing. I also have grown cherry tomatoes from Diggers as well as about 6 other varieties. But the cherry's are always a good performer. We get very heavy frost here and thus can't get the tomatoes in early enough or let them grow for long enough especially for the big varieties to ripen. However, my partner is off picking up a glass green house which we have gotten for free. Don't know how big etc so hopefully can start toms off earlier now.
Maybe pasta with homemade tom sauce, olives, salami and Persian feta for dinner tonight

Keiramax, sounds absolutely yummy. Your climate sounds like ours. Bad season here this year, have had 1 ripe small Tom.
-
Bought about 5kilos of toms at the market for $3 today so giving this recipe a go. Smells fantastic.
-
LL , hope you like it.
-
Made this today with some small truss tomatoes. I just planted 1 plant and we have been over run with tomatoes ;D
-
mab, hope you liked it. the truss tomatoes should give a good flavour.

We love it thanks chookie and I like the fact that I can do it in small amounts as the tomatoes ripen.
-
Have this cooking atm. The aroma is great. I also threw in some basil leaves. I am using this today in spaghetti bol sauce. Making 1/2 as I had enough tomatoes left over for this.
Words cannot decribe how delicious this is. I am turning my bol sauce into a shpherds pie as I do not want to add extra tinned tomatoes. I made the sauce 1/2 recipe added a lot of fresh basil. Used garlic, zuchini, celery, onion & a few left over spring onions, some red wine & 1kg mince, superb.
Thanks chookie, now on my to do list & will look out for cheap tomatoes :)
:)
-
Hally, so pleased you like it. I experimented with a few recipes before I decided on this one.
-
I made this today in my TM5. I didn't use cherry tomatoes, but small ripe tomatoes that were very flavoursome. I added some basil as Hally did. I had a little taste and it's delicious.
Another great Chookie recipe.
-
Katie, that is good. Will try the basil next time. I used a very large tin of Italian tomatoes when I made this last time. I use this as a base in my pizzas.
-
How long does this last girls?

Judy, I have just finished some that was over a year old. Some one said that because it has no onion it will last better than sauce with onion.
-
Thanks, in the fridge or pantry Chookie?

I haven't made any so far this tomato season, we haven't run out just yet thank goodness, :)( I made quite a bit early this year), but we found one of the best ways to have it was to use it on pizzas instead of tomato paste. It makes them a bit more interesting and delicious.

LL, have to agree and nice to use what you make yourself.
-
Make this about every 2 months, its my go to recipe :)
-
Hally, you must use a lot. One batch lasts me ages, but then I also make plum and chilli sauce.
-
What do you use it for, I use it as a pasta sauce, pizza base etc.
:)
-
Hally, used here mostly on sausage rolls, pies, sausages, pizza base, GC on poached eggs.
-
Try Chookies spicy capsicum sauce, my Dh thinks it's the best.
-
thanks chookie and bedlam. Will look for the other sauces.
cp loves this with spag bol.
-
We needed tomato sauce to have with our sausages the other night and we had run out!!! Disaster! I made this and we loved it, now we need more sausages to have it with.
Mine seems darker than Chookie's, I don't know why.

Gert gave me a bottle of Red Capsican sauce. After reading the ingredients, I thought I could copy it .However, although what I made was delicious, it was nothing like the original.
I have posted it somewhere.
I will see if I can find it.
-
It is called Roast Capsicum Sauce. It is on my Blog.
If not posted here, I will post it.
Found it!! Under sauces. November 2014
