Sorbet

Name of Recipe: Sorbet
Number of People: 6
Ingredients:

300g Fruit in season (oranges, lemons, strawberries, mangos, melons – any fruit of your choice)
700g Ice Cubes
150g Sugar
1 Egg White


Preparation:

 Place sugar into TM bowl and mix for 10 seconds on speed 9.

Add the fruit followed by the egg white and the ice. Slowly turn the speed dial to speed 10.

Use the spatula to assist in the incorporation of the fruit with the ice.

This takes approximately 1 minute.

Whenever I make sorbet I always use a little lemon rind in the sugar - firstly everyone (especially chef) is really impressed with the wonderful aroma and most fruits are very sweet so the lemon rind cuts into the sweetness a bit. On Thursday last week I was handed two apples for the sorbet - I had never made an apple sorbet before; I cut the apples in 4 - no peeling or coring - they weighed 380g and I followed the rest of the recipe but stirred continuously during the last minute. The sorbet was a beatiful pale green colour and tasted delicious. I think I would add a little vodka to really make this a special sorbet. On Sunday I used pawpaw and it would have been better with the addition of the rest of the lemon pulp as well as the rind in the sugar. For the first time also used dried egg white! Could not tell the difference.

Shayla, it was a green apple sorbet that convinced MrsT to buy the Thermomix !!  We had one in Italy and it was divine.  All they used were chunks of apple cored, but not peeled which were frozen and then blitzed with a little grappa or other liqueur.

So, are you saying the ONLY ingredients were frozen apples????  Just need to make sure you have enough liquid (alcohol in this case - love your work!!) to ensure you get it moving.  I recently did a demo with frozen fruit & didn't put enough water in through inexperience & it took ages (Oh, OK, about 50 seconds..........) to get moving without me needing to keep at it with the spatula. We need to be kind to our engines. ;)

Hi JZ - sorry, missed this one.  Yes, they said just frozen apple and I have done with "partly" frozen apple pieces and some grog - ? calvados probably.  It did work and was only a small quantity.  If I was making enough for 10-12 people then probably would need some water/apple juice.
