help with shortbread
« on: December 14, 2011, 06:19:20 am »
I have made shortbread using 3 different recipes in my search to find a nice recipe, and my biscuits all seem to end up crumbly.  I've tried the one from this thread (CarolineW's I think?), the one from the EDC, and another one which was given to me by a friend.  Does anyone have any suggestions as to where I could be going wrong?

I have had a friend tell me this happened with her EDC shortbread. I've never had that problem thank goodness. The biscuit is very 'short' which makes it crumblier than usual. Do you squish it together when you make them?
May all dairy items in your fridge be of questionable vintage.

Here's a link to my Brown Butter Shortbread. You just squish the crumble into the tin. If you do substitute more than 30g nuts for some of the flour, the mixture tends to come together more, but I still push it into the tin.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.
