A lovely big cake.  I am not usually a fan of white chocolate, but this one only has 100g, along with 100g nuts (I used pecans) and 300g carrots.  The recipe was easy and it tastes delicious.

I look forward to updating this thread of Friday, as Hobart consultants are getting a workshop in cake decorating based on this book to celebrate Valentine's Day.  Fiona Hoskin will be our demonstrator.  

Yes, we know we're very blessed.  :)

Cecilia I am getting older by the minute. Help please? What is I<3, I<3 Thermomix please?  I read it as I less than 3 and I less than thermomix. page 68.

I guess it is I love Chocolate and I love Thermomix? Correct?

My DD and boys came around to sample the cakes but only the other one could be used for school lunch as this one contains nuts and they 're banned.

Just a question for those who have made this cake -

I made it today and the cake itself was beautiful but my glaze was extremely thin and watery.  It looked nothing like the one in the book or the one in the pics posted on here...I can't see where I went wrong.  Does anyone have any suggestions for how their icing ended up much thicker than mine?

In the picture immediately above your post, we used a different frosting, the lemon cream cheese one from Travelling with Thermomix Carrot Cake.  In the picture in my original post, I didn't bother glazing it at all, so I was not aware there was a problem with the icing.

Thanks Cecilia, I feel slightly better now!  Still don't know how the one in the book seems to have a much thicker icing but maybe someone else has had success?

Well I guess my advice to anyone making this cake is if you want to decorate the top (like I did as it was being used as a birthday cake), don't use the glaze in the book.  Go with a cream cheese type icing instead.

Having said that, as I mentioned in my original post, this cake is really really yummy and got great comments from everyone who tried it.  It was loved by kids and adults alike and I would definitely make it again (just with different icing)!

I have this is the oven now. I was a little concerned about the carrots not chopping small enough, I found that I needed to mix for 1 minute, perfect. The cake mixture tastes great so looking forward to the end result.

dh has declared this the best carrot cake he has eaten. I used a cream cheese topping after the comments on here. Sad to say not even 1/4 left and only made yesterday afternoon. Our Japanese girl loved it so much she had some for breakfast.  This recipe is so quick and easy too. :)

I've made this today for Mum's birthday tomorrow, review of the cake tomorrow but for now here's what I did with the icing.  After reading asha's post, I added extra chocolate then placed it in the fridge until it started to firm up.  I stirred it every 10 minutes and it took 40 minutes to become a nice spreading consistency.

The icing sounds lovely Judy. I love carrot cake. I don't make it very often as I eat most of it.
