Milk recipes
« on: August 27, 2010, 07:04:36 am »
I seem to end up with a decent quantity of milk closing into the use by date.   We aren't huge milk users in this house.  I have been making custard to use it up, chocolate mostly, but the choco-orange one I made last time (and will be making again shortly) was lovely.

I'd thought I'd ask if anyone else has something a little different in their stash of recipes for using up 500mL-1L milk.

After watching the Gruen Transfer (Australian TV show about TV advertising) the other night I realise I have conformed to the pressures of advertising and marketing.....and should buy 1L at a time instead!

Have you tried yoghurt Amanda?
Maybe you could freeze it in icecubes to use later with fruit for summer.
May all dairy items in your fridge be of questionable vintage.

With 500ml spare milk you could make: Banofee Pie for dessert...a Soup Mix to either use on its own or as a replacement for a can of soup in a recipe, Chocolate Icecream Milkshake for fun.

I had forgotten about the mango ice cream using frozen milk cubes!  Best get ready for mango season soon!

My boys are not milk drinkers, neither am I really, though I did get my 5 year old to have a milkshake today....it took a bit of persuading.

I make Easiyo yoghurt, so I hadn't really thought about making yoghurt with TMX, but I should give it ago as the boys do like their yoghurt.

One way to use up a fair amount of milk is with rice cooked in milk   This is very simple and should be very easy to convert to the TM  and you won't have to do all the stirring!

While as described, this is a sweet dish, it can also be a savory -  I have prepared it without the sugar an cinnamon but instead added some pepper to taste (no additional salt) some browned sausage, either crumbled if loose or sliced thinly if in links, and some chutney (whatever variety that comes easily to hand).  Served with a vegetable salad, such as gado gado or a plain salad, this is a complete meal.

Depending on the type of rice, it can really absorb a lot of milk!

Do you like rice pudding Amanda? Mmmmmh with cinnamon and apple sauce or miixed with frozen fruit?

Boil 1l milk (or 500 ml milk + 500 ml water) for 7min/100*C/speed 1
add 200 g Arborio rice (short grain rice) and cook for 30 min/speed 1/ reverse/ without measuring cup.
Or use half the ingridients, cooking time is the same.

my buckwheat pancake recipe on my blog uses 640g of milk (well, buttermilk, but you can just add some vinegar to the milk you have ;))

I've just made the cheese and broccoli soup from this forum and it uses milk. The soup is really nice.
