I made these tonight,they are delicious.Light,fluffy and chocolaty.
I did some things different to the recipe:
Didn't have cherry pralines so used chocolate covered macadamia nuts instead.
Didn't have vanilla sugar,so substituted  a tablespoon of sugar with 1/2 tsp vanilla extract
I whipped my eggs whites in a bowl with a hand mixer.
Followed the cooking instructions and they cooked perfectly.Excellent recipe if you are looking for a gluten free dessert.

I didn't want to let Gayle's recipe for her Jam Muffin recipe to get lost in postings.So have posted it here ;)

"This is an old recipe that I make when the cupboard is bare. It's quick and easy and the muffins are good for lunch boxes. They freeze well too. This is the original recipe. (Don't know where the recipe is from). Makes 12 muffins"

Jam muffins

1/2 C jam
2 eggs
1/2 C raw sugar
1 C sour cream or yoghurt
60 g melted butter
1/2 C coconut
1 1/2 C SR flour

Preheat oven to 180 C
Whisk eggs and sugar until frothy
Stir through sour cream and butter and mix well
Fold in coconut and flour
Half fill muffin pans with mix, put in 1 teaspoon of jam in each, then cover with remaining mix
Bake 15 to 20 mins until golden brown.

Tips and Tricks / Cooking Mince in the TM.

I found this tip and photo on CookversesChef Facebook page.I thought it a great idea as it looks like the mince doesn't become "grainy".Thank you CookvesesChef  ;D

Did my tomato base sauce in the bottom then added the mince to the basket and cooked.... fantastic idea. The sauce bubbled up into the meat and cooked through. (I thought this recipe deserved to be posted in its own topic so we don't lose this lovely recipe from Emily Mum of 4)

"Here's my coconut yoghurt recipe:
1 litre coconut milk (I use the ayam brand and use more coconut cream than milk)
Heat in tmx to 80degrees and add 2 tab tapioca flour and 1.5 tab maple syrup and stir. Cool to 37 degrees. Remove 1/2 cup and add 2 teaspoons probiotic powder. Sir then mix back in.
Pour into warmed thermoserver and ferment 7 - 9 hours. Will thicken in refrigerator.
It's not cheap, but a 400ML Coyo (my favourite brand) sets me back $10.50 so making it is definitely cheaper."

I made this recipe today.I halved the ingredients ( I cooked the sauce 6mins/ 90c / speed 4) and it still made six good portions.I did use frozen cauliflower that I had in the freezer.I don't know whether this contributed to a watery result in the bottom of my dish or whether it was the cherry tomatoes I used.I have never seen " bocconcini cheese " here so used Mozzarella pearls.The sauce has a very subtle cheese flavour.We all enjoyed it.

Condiments and Sauces / Satay Sauce.

Satay Sauce from Fast and Easy Cooking.Acknowledgment to Janie Turner author.
300g smooth peanut butter
100g roasted peanuts
2 small fresh red chillies,tops removed
2.5 cm piece of ginger,peeled roughly chopped
Zest and juice of 2 limes
2 tbsp fish sauce
25g soft brown sugar
20g coriander
400ml tinned coconut milk
1.Place all the ingredients,except the coconut milk,in the TM bowl.Blend 1 minute/ speed8
2. Scrape down the sides and lid of the TM bowl.Add the coconut milk slowly through the hole in the TM lid while the blades are running at speed 3 until well mixed.
