Oh my goodness, the sauce as it was cooking smelt delicious! I added geeen beans and broccoli as it was steaming to bulk it out.

I would double the dressing ingredients next time - except for the peanuts - and add a chilli or two.

Two kids love seafood, one not so much so I added a thinly sliced chicken breast as well as broccoli and green beans.

We all thought this was gorgeous - next time I'll use a homemade laksa paste I get even more deliciousness!

Made for dinner tonight and served with rice, diced tomato / cucumber and avocado. I did halve the beans and add 500gm of mince that I dry pan fried (kids aren't overly fond of beans by themselves).

We all thought it was nice however have noted to add chilli as well as cumin / coriander next time.

Made this for the family - sorry no photos.

I used porterhouse steaks as we don't like scotch fillets and I couldn't find any nice eye fillets. The dressing was really delicious but made a lot so I have noted to halve next time.

The dish was really light and fresh - perfect for the heatwave conditions we've been experiencing.

Fresh Lemon and Pea Risotto

Made this for a quick dinner. Was gorgeous and made heaps. I served our family of 5 plus had a big container left over which I gifted to a friend who happened to call in after we had eaten. They enjoyed it too.

Gorgeous flavours. I used 850gm sirloin and it remained tender. There was a lot of sauce and I was surprised that the amount of meat only just did our family of 2 adults and 3 kids. I only used the minimum amount of dried chili as it was the first time I had made the dish.

Next time I will increase the meat slightly, increase the chili to 1/2 teaspoon and make a veggie side dish to "pad" it out.

Finally got around to cooking the cauliflower rice from the booklet tonight.

The dish is nice however I usually pan fry my cauliflower rice in a pan. I think next time I will reduce the lemon juice slightly and only use the Thermomix to prepare everything but cook the ingredients in the frypan.

Used beef instead of lamb. Forgot to add the salt and tomato paste LOL so I thought it was understandably bland but the family liked it. Will definitely remake properly.

This recipe makes a huge amount! I doubled the chicken and spice mix as we were having this as a main dish. Next time I would halve the rice but keep the same amount of curry sauce - using some to drizzle over the finished dish.

Another tasty and mild curry. Again subbed white wine vinegar for Apple cider vinegar.

Page 143.

Fish sauce smell was very strong in the marinade / dressing so I didn't use it on the kids salad portion.

I made the marinade in the morning prior to work and let the salmon marinate for the day.

The overall taste was really lovely. I think next time I would leave out the bean sprouts and use rocket instead of baby spinach.

Low Carb book page 50.

Made this for dinner tonight. Got the thumbs up from the whole family. I served the chicken on top of Cos lettuce leaves along with a side of steamed rice (I know defeats the low carb LOL).

The only change I made was to only use half the dressing - I think to use the whole lot would make it way too soggy for our tastes.

Page 80.

Have been slightly slack on the Thermomix front lately so this week I have only Thermomix meals on the menu.

I used soy sauce so didn't add any extra salt. Both my husband and I thought it was delicious however the kids weren't so impressed (but they don't like avocado so that could have been the issue). Thankfully I have two thermomixes so whilst the rice was cooking in my TM5, I made the soy seeds mix in my TM31 to save time.

It does make a huge quantity so unless you are catering for a party, next time I would halve the mix.

Please excuse the messy bowl - it was a thrown together dinner after kids dance classes.

Chit Chat / Another day of firsts (for me!)

So after yesterday's success in scones (plus couldn't believe I whipped cream in 40secs!!) today I have made hollandaise sauce and now cooking mini pavlovas. Plus made the best and smoothest curried sauce for curried chicken I have ever made in my life.

Loving this machine.

Made this as my first attempt at (a) making risotto in the TMX and (b) using the stock concentrate I made earlier today.

I added two garlic cloves with the shallot and increased the peas (frozen) to 300gm. I also cooked for an extra 3mins and ground in lots of pepper. I also accidentally bought prosciutto instead of pancetta but don't think it made that much of a difference as it was really only a garnish. Finished with chopped herbs from the garden (mixture of thyme, parsley, rosemary and oregano).

I quite liked it, husband thought it was nice. Sorry no photos - didn't even cross my mind LOL.
