I made this for Xmas lunch. I found speed 4 wasn't enough to chop either carrot or Beetroot and used speed 5. It was missing something, IMO. I can't put my finger on it, perhaps less OJ and more balsamic. I'm not a huge fan of raw beetroot, so perhaps that's why I didn't like it that much. Linked CC

I've adapted this recipe from one I found on http://clevercook.net.au/2013/12/10/another-festive-kitchen-gift/ and they're superb! MJ's Rum Balls These are very rich, so make the balls small. Drain Chickpeas at least two to three hours before use so they are quite dry. Soak raisins at the same time. 100g cacao wafers (or use 70% chocolate and leave out the maple syrup and coconut oil) 2 tsp coconut oil 3 Tbsp maple syrup 70g raisins, soaked in 3 Tbs Rum or other liqueur, depending on flavour choices 70g almonds, pecans or hazelnuts (or a mixture of all) 400g can chickpeas, rinsed and drained well 30g coconut 50g rapadura sugar Melt wafers, coconut oil and maple syrup for 5 minutes/sp 1 - 2 /37ºC, scraping down occasionally. Add the almonds, rapadura and soaked fruit and blend on 5 seconds/sp 6 - 7 Scrape down and repeat. Add the rest of the ingredients and blend on speed 6 until the mixture comes together. Refrigerate for 5 minutes or so until firm enough to roll. Roll into balls and coat in cocoa, coconut or crushed nuts of choice. Flavourings Orange – grated rind of one orange, add Tbsp of the juice to 2 Tbsp Cointreau Hazelnut – use hazelnuts instead of almonds and use Hazelnut Liqueur Cherry – use glace cherries instead of raisins and soak in Cherry Liqueur or Cherry Brandy Cinnamon – add 1 tsp cinnamon For nut free, use sunflower and pumpkin seeds instead of nuts. The next lot I make, I'm going use hazelnut liqueur and roll them around a roasted hazelnut and coat in crushed hazelnuts for a Ferrero flavour.

Caramel Magic Bean Cake
420g can cannellini beans, drained and rinsed 1 Tbsp plain yoghurt or buttermilk 1 tsp vanilla extract 4 eggs 60g coconut flour 1 tsp bi-carb soda 1 ½ tsp GF baking powder 125g butter, softened 120g rapadura or coconut sugar
Preheat oven to 180C. Grease a small ring tin. Place beans, yoghurt, 2 of the eggs and vanilla into TMX bowl. Blend for 2 minutes on speed 8. Remove but don't bother rinsing bowl. Place butter and sugar into TMX bowl and blend on speed 3 - 4 for 30 seconds. Scrape down and blend again. Add remaining eggs, one at a time, blending in between. Add sifted flour, reserved bean mixture and raising agents and mix on speed 3 until blended together. Mixture will appear curdled. Pour into tin and bake for 35 to 40 minutes or until cake bounces back from a gentle touch. Remove to a wire rack to cool
Caramel Sauce ¾ cup rapadura or coconut sugar 65g butter 80g coconut cream
Place sugar and butter into a small saucepan. Bring to the boil, stirring constantly. Boil while stirring for about 2 minutes. Add coconut cream and bring back to boil, again stirring constantly. Boil, stirring for about a minute. Serve cake warm as a dessert with Caramel Sauce and cream or ice cream
Caramel Icing For an afternoon tea cake, add 1 cup golden icing sugar to the caramel sauce. Beat together until a smooth spreading consistency and ice cake.

These are excellent. I followed the recipe exactly, but replaced brown sugar with rapadura.

I made these yesterday and the dough is the yummiest cookie dough I've ever tasted! Unfortunately, I don't like the biscuits. For me, the dough is too short, with so much butter in it. I had to refrigerate the dough before I could roll the biscuits in my hands. I like crisp biscuits. I will try again with half the butter and only one egg next time and see how they go. The recipe makes heaps.

Hi all, I've been absent for some time due to my studies. I've finished three units and have just enrolled in another to do over the holidays. Still really enjoying learning. I've switched to Advanced Diploma of Naturopathy instead of Nutritional Medicine. I still do the nutrition units, but more interesting with homeopathy and herbal medicine units.
Been very busy with harvest, cooking and heading out to the paddock numerous times a day. It's a fantastic season and we're really pleased with the yield and the prices!
I think of you all constantly, but just have to balance my time on the computer.
Oh! Exciting news! I'm going to be a Nan in March next year!! Woohoo!! DD is having her first - didn't waste much time!!
Will check in now and then over the holidays.

I would love one of these machines. It's a compressor model and appears to be the best after numerous searches and reviews. However, I can't seem to find this model available in Australia. Has anyone seen or heard of them?

Today I had a lovely surprise visit from Cecilia and her DH! Lovely to see both in real life. My phone's been out of order, so Cecilia was finally able to contact me this morning via the forum with a pm. She had Ralph came this arvo and stayed for a cuppa, a visit to the farm and a tour of our little town. We chatted as if we'd known each other for years! It's amazing how much we had in common. The funny thing was, I'd just made Fiona Hoskin's (Cecilia's upline in the TM business) Full o' Fruit Slice this morning. So we enjoyed that with our cup of tea. How's that for a coincidence!!

I've been a bit busy lately, so haven't posted on here. I come on to grab recipes and check things, but no time to post. I've become a student again! Undertaking an Advanced Diploma of Nutritional Medicine, hoping to do a Bachelor and enough units to become a Naturopath as well as a Nutritionist. Just reading Jude Blereau's Wholefood For Children. Such fantastic information in this book, most of what I already know, but the science behind it is fascinating. Her other book is on order, so look forward to that, too. One of my units is written by her, but unfortunately she can't come and present it. I'm doing 5 units this semester, 3 online and 2 face to face. The Nutrition and Whole Food ones are F2F, which is good. DH is fully supportive and I'm so much more organised in the house - not spending hours on FB!! Still doing MJ Skincare, but not so full on. No markets etc, just online, local and wholesale sales. Hope everyone is well, I don't have time to trawl through the pages so can't keep up with everyone. JD, how's Geoff going? Gert, I catch up with what you're doing when I have a quick FB fix at night time, CC too. Must get back to study, finished my cuppa and apple and blueberry muffin.

Have you read the report about the caustic soda in the salt shaker at the Bunbury Chicken Treat store? Sounds very suspicious to me. Any caustic soda container has a childproof cap and is clearly labelled. It wouldn't be stored anywhere near salt.

I need to lose about 7kg and have tried to reduce, but I'm just not good at it! I figured I'd give Herbalife a go and it seems to be doing the job.
I'm not keen on the idea of shakes, but am willing to try. They're fine if you add fruit and oats. I love the tea, that's my saviour and the vitamins don't make me nauseous if I take them without food. That's a bonus, since Swisse and other ones do.
So, has anyone else tried HL? It's quite expensive, but I don't plan to be on it for more than two months. Once my weight is down, I have enough nutritional knowledge to maintain it, I'm sure.

Hash Browns Serves 4
1 onion, peeled and quartered 600g potatoes, peeled and cut into chunks 50g butter 50g butter, extra and a little oil
Chop onion on speed 5 for a few seconds at a time, scraping down in between. Add potatoes and chop on speed 5 for a few seconds at a time, scraping down in between until chopped coarsely.
Remove from bowl and place into a sieve. Press as much liquid as possible from the mixture. Place back into bowl and add the 50g butter. Cook for 5 minutes, 100, speed 1, reverse. Remove and place into a bowl to cool.
When ready to cook, heat the remaining butter and some oil in a frying pan. Fry each side until quite browned and crispy. I turned mine twice on each side.
