Desserts / Re: Macadamia and Honey Tart
« on: July 19, 2010, 12:23:06 pm »
Made this yesterday, Chookie.  It is sooooo divine.

I made a pastry base as I didn't have filo and couldn't be bothered with the stupormarket.  I used all macadamias instead of almonds and used yoghurt instead of cream as I didn't have any.  I used a bit of orange zest instead of the mandarin.  I didn't use too much as I thought the taste might be a bit strong for the small people in the house...turned out they didn't like the macadamias anyhow - they got in the way of the pure bliss of the butter and honey ;)  The princess looked very content with the TM bowl to clean.

I adapted a tart pastry from one in Cooking with Kurma.

I took a couple of photos and shall upload them soon.

obbie....glad to hear that you enjoyed it, it worked and that now there is a new evolution..  We need to make some icecream again, I might try it with the cocoa powder as you did....I love the way recipes evolve with each person who makes it.

Previously for chocolate I have done this version but with a large whack of melted chocolate to chocolate it up which was very rich.  Thanks

We had to replace ours after about 8 months and another friend at about the same time.  I think having a spare one on hand is a good idea.

Questions? Technical Issues? The Survival Guide / Re: travel

Pre thermomix I used to travel always with the stick blender :-[

I reckon it is worth the effort to travel with a tool that makes it easy to have good food.  I am such a fusspot about wanting and expecting divine food all the time (Spanner calls me the 'surfer' because like a surfer looks for the perfect wave,  I am always searching for the perfect taste).  Buying food so often disappoints and cost too much....except in Bali or similar locations....or at the family members....who own a thermomix :)

Breakfast / Re: Chocoate Panna Cotta Porridge

I love the sound of this.  We have been calling porridge from the fridge 'porridge custard' for a few years but I think I shall embrace the concept of panna cotta.

I haven't made this cake but have had the same problem with my carrot cake recipe in the TMX.  DD has repeatedly asked, can't we just do it the old way.  To which her mother wants to growl, 'no, I want to get it right in the TMX'.

Will try the buzzing up for a second though...although not if DD sees me trying to make carrot cake  ;)

Spanner has been playing with uploading.  :-[  .  It was a lovely present DD made to take to a fellow chicken lover named Geoff,....tiny little organic madarins from our next door neighbours tree.  I must grab some more and set to chookies macadamia tart.

Thank you my royal prince spanner.

The wet mix is mighty fine raw, as evidenced by the little paw that reached in as I took the photo.

I think the mix would easily make 12.  I did 4 large ones in stainless steel bowls and 2 small silicone ones today.  I think there would easily be 2-3 small silicone ones to the large ones.   When I work out how I'll attach the photos.

Special Diets / Steamed Coconut Rice cakes (Gluten, Egg, Dairy Free)
« on: July 10, 2010, 06:51:47 am »

Steamed Coconut Rice cakes

Ingredients
210g Rice flour
200ml Coconut milk
160ml Boiling water
80 - 100g sugar
1/4 tsp Vanilla essence
1 tbsp dry yeast

Mix flour, water, coconut milk, sugar and vanilla (speed 4ish for a few seconds).  Transfer to a bowl and set aside for an hour or more (overnight would be fine).
Add yeast.  Leave to rise and bubble.  The yeast will make the mix thicken as it starts to do it’s stuff.  Once it has risen and started to bubble and thicken stir in 1 tsp baking powder.
Pour mix into moulds lined with baking paper.  And place on varoma tray and set aside for 10 mins or so while you heat 1 litre of water to varoma temp on speed 2 (I chopped some pandan leaf and popped it in the water).  Place varoma tray on TM and steam for 10 - 15 mins.  Depending on size of your moulds and how wet your mix was.

They are very soft and cake like.  I've got photos but couldn't upload....or remember where I had seen the advice on how to on the forum....mind you I couldn't find how I'd added recipes before either.  I must need a nap or a little more rice cake to stabilise my blood sugar :D

These are inspired by the ones our neighbour from the Philipines shares with us sometimes.  One of her friends makes them and I haven't been able to get the recipe out of her.  Here is what has pleased us.  I would love it if anyone has other recipes.  There were some when I was looking on the net that used rice that was soaked and fermented overnight and ground.  These seemed appealing however I was in a hurry to get some more of these into my belly and overnight seemed too long.

Desperately trying to retrieve from my memory bank the brand name I saw on the bottom of a friends old thermoserver...will try and follow her up.

While I love my thermoserver at home I have had a few disasters with transporting meals in the thermoserver and have taken to using stainless steel containers with a top seal and popping them in a shopping bag eski or the kids lunch bags.  Keeps it just as warm and quite safe....on the right day we still smell Cyndi's potato curry in our car ;D

The stainless steel containers that I have found the essential companion have a silicone seal in the lid.  They keep airtight forever (and in the tropics we really get a good go at testing that out).
