Questions? Technical Issues? The Survival Guide / flour

I just love the 'best of our recipe community book but I get confused by the flour. They have some of the differences in the front. You'd think they 'd mention the flour differences.

What would strong bread flour be? Hoping it's baking flour
Italian type 00?
plain flour- is aldi plain flour good enough?

Bread / Herb and garlic foccacia rolls

This recipe is adapted from 4 ingredients thermo recipe book

300g lukewarm water
2 tsp olive oil
7g dry yeast
500g bakers flour
1 1/2 teas salt
1 tsp mixed herbs
1 tsp garlic

Chop garlic 2-3 sec speed 4 set aside
Place water, oil and yeast in the tm bowl 5 secs speed 3
add flour, salt, herbs, and garlic  :: 2 mins

Turn the dough out into a large lightly oiled bowl and cover with cling film. Leave to rest in a warm place for 30 mins or until it has doubled in size. Preheat oven 210C. With TM spatula cut dough into four or smaller if require. mound into a round flat shape. I pasted the top with tomato sauce, ham and grated cheese but can use any topping you like. Bake for 15 mins.

Look what I made in the thermomix last night. Made yummy mojitos, herb and garlic pull apart bread, marinated beef, scallops and leek, salad with chicken and cheese, broccoli salad (took 8 secs to make) raw beetroot salad, I love my thermie! I would never have attempted something so good as that bread. I am so proud of it!

Babies and Kids / mince squares for school lunch boxes

I made these today. Great for lunchboxes.
Your normal sausage roll mix, for me that is sausage mince, onion, garlic, breadcrumbs and grated cheese.

Then I cut sheets of puff pastry in 8 rectangles and put a spoonful of mince on each then folded to a square and closed with a fork on three sides, pricked the top with the fork and painted with a beaten egg. Cooked at 200 for 30 minutes.

All i could think of was if I had my TM I wouldn't have to put my hands in the mixture.  >:(

Tips and Tricks / mincing

I am still waiting for my TM to be delivered and planning a few things. Hubby wanted to buy a mincer cos he wins a lot of meat trays with round steak in them and we wanted to do something different with them. Any tips on mincing in general would be great. i didn't see a thread in here for mincing.
I was wondering about sausage mince as well. Does anyone know if thats just finer mince or if it has other ingredients?

Introduce Yourself / Hi there

Hi there I am new to thermomix. My friend has been talking about it for months and when she decided to buy one I went to her demo and I decided to get one as well. Being an experienced demonstrator, I am going to pay for mine by signing up as a demonstrator. I just hope I can sell enough in two months to pay for mine. Feeling a bit nervous about that. I do have one person lined up already.

I am so glad I found this site as I found the recipes section on the thermomix site not very user friendly and I like how it is set up here. Plus the tips and tricks section will be useful. Maybe I need to play around a bit more on there to get the hang of it.

Anyway, I am in Canberra with a hubby and two teenagers who are always hungry so hopefully the tm will inspire me to cook and bake a bit more for them. I can't wait til I get it. I am paying for it Wednesday so I am not sure how long it will take.
