Oatmeal Bread (with photo)

Oatmeal Bread

Ingredients

280g water
15g honey
20g fresh yeast
250g white flour
150g wholewheat flour
110g rolled oats/oat flakes
20g olive oil
10g salt

Rolled oats/oat flakes (to coat with)

Preparation
    * Warm water for 1 minute at 37ºC on Speed 1
    * Add honey and yeast. Mix for 4 seconds on Speed 4
    * Add white flour, wholewheat flour, rolled oats, olive oil and salt. Knead for 5 minutes
    * Put it in a deep bowl. Cover with plastic film. let it rise for 1 hour
    * Cover oven tray with baking paper. Sprinkle with a little flour
    * Give the dough desired shape. (I divided it into two pieces. I made 1 bigger bread roll. I divided the other half into 4 pieces and made 4 smaller rolls)
    * Brush on the top with a little water. Coat with oats. Let them rise for 1 hour
    * Bake in preheated oven at 200ºC for 30 minutes

Thanks for posting this, Farfallina.

I have been looking for a "new" oatmeal bread - I have a lot of oatmeal to use up as I ordered some and the amount was larger than I envisioned.  I had forgotten how light rolled oats actually are as I usually use steel cut or "pinhead" oatmeal.

The photo looks wonderful.

Farfallina,  thanks for posting this as Oatmeal bread has a very nice texture and flavor.   I make a sour dough one and it is one of our favorites.

I am not very familiar with steel cut or pinhead oatmeal. Not yet at least ;)

To be precise, I used Quaker white oats for this recipe. The kind I buy and find around is always

Since I don't have quite knowledge about oatmeal kinds, do you think I should be more specific in the recipe? Instead of oatmeal should I write white oats or oat flakes? rolled oats?

Farfallina,  I use rolled oats,  organic ,  when I can get them.

Rolled oats or oat flakes would be more specific.   I grew up on what is now known in the U.S. as "Scottish" or "Irish" oatmeal which is not at all like Quaker rolled oats.   comparing types of oats/oatmeal
