I have just put the sponge mixture into the oven, and was wondering if I put the custard mixture on top before the sponge has even cooked or do I need to wait til after the sponge has cooked ie. 40 mins?

Hi Cream Puff,  You first bake the sponge with the fruit on top for approx 40mins.  Then pour over the combined cream and eggs and bake a further 15mins or until set.

I would think any tinned fruit DJ I'm going to make it with tinned blueberries today since that's all I have and am trying to reduce my tin situation

I just read back on this thread suzanne and Trudy said it reheats well in the microwave.

I made this using a tin of blueberries and it was absolutely delicious, will definitely be making it again next time I will try tinned pears

Got pears, going to try this with cocoa powder in too.
Only got double cream rather than thickened, do you think that'll be ok?

Ok it worked it was a great chocolate and pear pudding.

Here's what I did:
Added cocoa powder to the first sponge mix, with a little extra milk. ( sorry didn't measure, just tipped in approx 1.5 T.

Then place tinned pears all over the sponge mix and baked 35 mins.

Then I melted 100 grams DARK chocolate, added the double cream and two eggs, sprinkled the cinnamon sugar and baked anther 15 mins.
