Cherry Slice
Serves 12
Ingredients
225g SR flour
60g almond meal
150g castor sugar
180g butter
300g sour cream
125g mascarpone
2 eggs
340g bottled cherries
2 tablespoons brown sugar
Preparation.
Preheat oven to 180* and line a 20cm x 30cm slice pan, extending paper over the edges.
Place flour, almond meal, and caster sugar into bowl. Add in butter in pieces. 10 seconds, speed 5.
Press mixture into the slice pan and bake for 15 minutes.
Allow to cool for 10 minutes.
No need to wash the bowl.
Place sour cream, mascarpone and eggs in bowl and mix speed 4, 8 seconds.
Spread this over the slice and smooth surface.
Scatter cherries evenly over and sprinkle with brown sugar.
Bake for 25-30 minutes.
Allow to cool in the pan before cutting.

This can be served as a slice or a dessert.
I found the original recipe in a very old BBC Good Food ;magazine and have altered it for a thermomix.
