Broccoli Terrine (Timbales)

Name of Recipe:Broccoli Terrine
Number of People:serves 8
Ingredients:
400g broccoli florets, fresh
1000g water
1-1/2 tsp salt
4 eggs (60g ones)
150g cream, 30% fat
1/2 tsp pepper
pinch nutmeg


Preparation:
Place broccoli florets into varoma. Place 500g water and 1/2 tsp salt into mixing bowl, place varoma into position and steam 15min/varoma/speed 1.  Set varoma aside and empty mixing bowl.
Place steamed broccoli, eggs and cream into mixing bowl.  Season with 1 tsp salt pepper and nutmeg and mix 1 min/speed 5. Pour mixture into 8 small buttered moulds and place them into varoma receptacle and tray.
Pour 500g water into mixing bowl, place varoma into position and steam 22 min/varoma/speed 1
Place broccoli terrines upside down onto a serving place. Remove moulds and serve hot.

Tips/Hints:
These were actually better the next day, reheated in the microwave.  I only did 1/2 the recipe for the 2 of us but for larger families I'd do the whole recipe as they keep well in the fridge.
The moulds must be very well greased or the mixture will stick to the bottom and they won't unmould nicely. I think I will place a piece of baking paper in the bottom of each one next time as well  - this would have to make it easier to unmould.
Don't worry if some from the tray don't appear to be cooked as well as those in the bottom are (unless you want them for that day) as they will finish cooking when you zap them next time. If you need them all then cook them a little longer.
I used 1/2 cup capacity ceramic moulds.

Thanks JD - another recipe that I need to write up - but looks almost the same as your, so why bother?

Looks good Thermomixer - different shape to mine, a lot taller.  Mine were round and flat due to the shape of the little dishes I did them in. What I like about them is the fact that you can cook them in advance, leaving you more time and space to do other things, especially when you have visitors. Then just heat them in the microwave.

These sound  really nice Judy and thanks for the tip of them tasting better the next day, I'll keep that in mind. :)

Thermomixer, love your photo, they look great, has made me want to make them too.  ;D  Are the orange ones pumpkin?

The orange ones were carrot - I converted recipes from an old cookbook before i found that the Ful Steam Ahead cookbook has the broccoli timables.  Think it was similar - but maybe not the cream?  have to check

I used cream this time but I think I'll use skinny tinny next time. A little less calories.

Had them for dinner last night, with a few other bits and pieces of course. They were lovely.  I wonder if you could do half carrot and half broccoli or cauliflower to impress guests, or would it end up a big grey slurry of steamed vegies?

Reckon you could Cookie1, I can't remember how thick the mixture was before it was cooked though.  Whilst it is still fresh in your memory you'd remember.  Would it be better to pour the two different varieties in at the same time on opposite sides of the container or put one lot on the bottom and add the other on top of it.   When I do 2 different soups in the same bowl eg caul and broccoli, I pour them in at the same time gently and that works well even though that mixture would be runnier than the timbales I would think.
Digressing but in the old pre-TMX days I used to grate carrot and zucchini, stir fry in butter until soft & caramelised, press the very well cooked mixture into little pots then upend them onto baking paper lined trays and just re-heat in the oven with the rest of the meal.  Did it for visitors once and someone commented that they must get my recipe for them ;D ;D Probably the simplest thing I ever made up out of my own head and it went down a treat.  Zucchini is such a bland vegie, it needs something special done to it.

Best to do the broccoli first and the the carrot, so when you unmould the lighter one is on top
