I made some Oat Crisps today. I ran out of cherries so used some slivered almonds as well.  Both DH and DS like these.

Marina, a nice way to spend a pleasant weekend.

K Atie, a very busy week for you.  We often went to the Gippsland Field Days so I know how sore my feet would be after walking around all day.

Two of our GD came today to do some cooking.  One is vegan and the other is a non vegan.  We made a vegan lasagne and a vegan choc-raspberry soft serve.  Also a chocolate cake with icing and mini m&m's on top.  No photos as they all went home with them.  A fun day but now I am ready for a rest.

Last nights cottage pie and vegetables that we didn't get to eat due to our surprise visitors.

We had a lovely surprise happen last yesterday afternoon.  Two of our GD came for a surprise visit, one is from Geelong and the other lives in Queensland.  They had arranged for some Japanese entrees to be delivered before dinner with another surprise to come.  About 6.30pm two more GD arrived after they had finished work. They live about an hour away  and they brought the main course from our favourite Italian restaurant with them.  We had a lovely time with them with lots of talk and laughter.

Judy, I hated smoked cod as a child and still do.  Your mornay does look nice, I'm glad you were able to eat it.

We are having Cottage pie with potato & cauli mash, a mix of brussel sprouts & broccolini as there isn't much of either one and carrots.

I did the grocery shopping this morning.  Our local Coles store has been going backwards for a little while now but today it was a disgrace.  The aisles were stacked with trolleys  waiting to be unloaded, the floors were not clean and scattered with rubbish, and staff were not in the least bit helpful.

Last night was baked beans on toast with an egg on top.  Tonight fish cakes with parmesan creamed spinach & mushrooms, carrots and a few home made chips.

Yes sure Marina. Donít know where I found the recipe, itís handwritten and uses cream cheese instead of condensed milk.

400g Tim Tams
250g full fat cream cheese (at room temp)
1/2 cup coconut or crushed nuts (I blitzed some shaved almonds slightly as thatís all I had)

I only made half quantity and made 36 slightly smaller bite sized balls. This is what I did.

Blended the biscuits until smooth, didnít take long in the Thermomix.
Added the cream cheese and mixed on speed 5 for a few seconds until it all came together.
Refrigerated the mixture for 30 minutes then rolled into 1 teaspoon balls, rolled in the nuts and refrigerated.

Freezes well and apparently can be popped into your mouth in a frozen state so they are no safer in the freezer than the fridge!  I have no idea what they taste like but they should be nice.

Thanks, Judy, that's a nice easy recipe, unfortunately I don't know of a vegan swap for the cream cheese - I might have to do a fair bit of research on that one - I am thinking a macadamia cream (if there is such a recipe out there!)

Marina, try one of these sites for vegan cream cheese, Loving It Vegan, Nora Cooks  & Minimilist Baker they all have a recipe and use cashew nuts.  These sites are the ones I mainly use for my vegan GD.

I'm feeling a bit weary today so it's just sausage rolls, chips & peas tonight.

Judy, those Tim Tam balls sound very nice.
I made a pot of leek, potato, cauliflower & broccolini soup for lunch.  A batch of vegetarian/vegan sausage rolls for two of my GD.
