Mab, here is the recipe for the leek and mushroom pie - it can easily be made in advance and can be quite firm or softer, depending on how you make the sauce component.  The recipe is really a semi-pie (I don't know the 'correct' culinary name for it!) - just the topping is pastry  https://wallflowerkitchen.com/creamy-leek-mushroom-pie-vegan/

Marina, thank you  for the link.  Although that wasn't quite what I was looking for, it has given me a good idea.  I think I will add the spinach to the sauce and then layer it with slices of  pumpkin.  I subscribed to the site as it has some great meals that I will be able to use at a later date both for GD and myself.

Beef patties in onion gravy with mashed potatoes, carrots, silver beet & asparagus.  Vegetable curry for me.

Still experimenting with recipes for Xmas day - latest try was leek and mushroom pie, not bad; it is definitely a contender.  Helps that it is very quick and easy!

Like you Marina I am still testing recipes for our GD.  Your leek & mushroom pie caught my eye and I was wondering if the filling is soft or firm.  The reason I ask is that I want to make a pithivier for her, it's like a round pasty/pie.  It has a roast pumpkin & spinach filling and I would like to put some sort of mushroom base under the pumpkin but am not sure if it would make the pastry to soggy.  I was hoping to get it made the day before rather than cook it on the day.  Thanks for any suggestions.

DD took me to the Black Friday sales yesterday.  I bought some new bed linen, a couple of Christmas presents and a copy of the RTE Dinner Book.  We then went out for lunch to our favourite Italian restaurant.  A  nice day out but very tiring.

I made another 3 dozen shortbread and 3 dozen gingerbread cookies at the weekend.  They seem to go as fast as I make them.
Today I made Honey Mustard Chicken Legs for dinner from RTE, Spaghetti Bolognaise also from RTE and Braised Steak and Onions in the SC.

We are having a beef casserole for the men, lentil patties for me, potato mash, carrots, creamed silver beet & grilled tomatoes.

Chookie, it's good to hear that you are finally moving in to your new home.  I hope it isn't too long before you are settled in.

Yesterday was DH birthday.  The family arrived with lunch from our favourite Italian restaurant and I made a trifle and fruit salad for dessert.

Thatís a perfect looking pudding Margaret, youíve certainly got them down pat. Do you have vegan family members as far as the Panacotta  goes?  I thought it was strange that a recipe would ask to use darker sugar as it would alter the colour we are used to with our Panacottas. The difference in the next one will be interesting.

Yes Judy one of our GD is vegan.  These are a trial run for her Christmas dessert to go with the vegan meringue I made a week ago.  I've yet to decide on her main course, possibly a vegetable type wellington.
