Title: Vanilla Slice with NO cream

Vanilla Slice
Number of People:9-12
Ingredients:
220g sugar (or less depending on taste - this amount is very sweet!)
95g cornflour
70g custard powder
990g milk
2 eggs
2 tsp vanilla
30g butter
2 puff pastry sheets

Preparation:
Place pastry sheets into preheated hot oven for approx 10 minutes or until golden brown. Take out of oven, loosen from tray and press down while warm (be careful the steam coming out is HOT!)

Place all other ingredients, except for butter in thermomix. Mix speed 9 for 3-5 sec to combine ingredients.
Cook for 10 minutes at 90 degrees C on speed 4.
Add butter and mix speed 4 for 30 seconds.
Pour custard onto pastry sheet and top with second pastry sheet, pressing down gently.
Top with icing - I just mix icing sugar, butter and hot water by hand, sorry don't use measurements.

Tips/Hints:
I use my square tupperware cake container which fits a pastry sheet in perfectly, however if you let the custard cool a little it should be thick enough to spread onto pastry without needing to put it in a container.

This custard tastes just like a bought vanilla slice - very yummy and not expensive to make.

A friend of mine has frozen it and says that it freezes well. I must try it one day as it would be great to be able to wrap and freeze in portions.

Coops - This is a great recipe. Thanks for posting it! It's very easy and creates a thick and yummy vanilla slice.  The only different thing I did was I put the sugar, cornflour and custard powder on speed 9 for 20 sec before proceeding with the rest of the recipe, and put some passion fruit pulp on my icing.
I made it for the teachers at my kids school ( I run the canteen ) and there was none left, going to make some more this afternoon.
I wouldn't normally use custard powder but it works for this slice and gives it that shop bought vanilla slice taste that has everyone reminiscing when they taste it.
Made this again yesterday, added some lemon juice to the passion fruit icing , yum.

astarra - I made this for DH last night - he loves vanilla slice! He was very impressed and decided that even if this was the only thing TM could do it would still be worth having... looks like I am in for making a lot of vanilla slice!!  He did ask if I could add more vanilla next time tho. I also only did 200g of sugar, just coz.

dede - I made this yesterday as well. I only added 150g sugar and no butter at all. Yet to slice it up and taste. But nice and easy.

JD - It's great and so easy.  I cut the sugar to 180g and it was delicious.

Chookie - OMG,  made this today.  Very, very easy.  Had visitors for dinner and although this was not on the menu,  they all ate some. I iced them with passionfruit icing.  What surprised me most was that they were easy to cut.  Delicious. Made Raspberry cream match sticks with the sheet of leftover puff pastry. 

Katiej - I made this today - so easy and so delicious. I gave my OH a small piece to try, all he said was "yum, yum, yum....then more please".

deedub - I made these yesterday, reduced sugar to 180g, definitely sweet enough with this amount. Delicious! Won't post a photo, my icing skills not up to scratch, plus I coloured the icing bright pink for DD's birthday - tasted better than they looked but kids loved them. Does anyone know how long they would keep?

JD - Roughly 3 days deedub.  After that the pastry sort of loses it's grip on the filling IYKWIM.

littleramblings - Do you think Tapioca flour would be ok? Also, once you have poured the custard over and placed the second sheet on top, do you then just put it in the fridge to set?

Shazzy - Not sure about the Tapioca Flour but I made this yesterday for the first time and forgot the vanilla (no vanilla in vanilla slice!!) and it still tasted yummy.  I actually left mine out for a while and the custard still set though it is firmer again today after being in the fridge.

knittercook - I used sao biscuits, they are amazing! The custard is the perfect consistency and the Sao biscuits fitted perfectly in the square Tupperware container as well.  A 5/5 recipe, thank you for sharing.

Suzanne - I made this today to take to my mums and it looks and tastes divine, thank you so much.

thermo28 - Made these yesterday, a major hit. I went past the bakery's and they were charging $4.50 for one, knew I had seen this recipe somewhere and was wrapped I didn't need to buy ingredients as I had everything. The best part was they tasted and looked just liked the bought ones, so yummy.

disaster chef - Made these yesterday with Lattice biscuits instead of pastry and they were a huge hit.  Thank you for posting the recipe.

maddy - I succumbed, and made this last night.  Left overnight to chill, so looking forward to tasting and cutting up later.
It's so easy...don't know why I haven't made it before....Hubby a very happy man. Lovely, thanks -  think I'll find a container to fit the sheets without having to cut them to fit.

Emme - I made this a few days ago using the 180g sugar. Not quite as sweet as DH is used to but he thought it was nice.  He just loves vanilla slice.

DebbiebillG - I made this today and YUM YUM YUM.  My DH's parents are coming over tomorrow with DH's Uncle who's here on holidays from Scotland so plenty of people to eat them !   Just had a try and they're not quite set enough but they taste amazing !!!

Bedlam - Made this today on your recommendation Debbiebillg, not disappointed. Very nice.

Thermesa - Still in progress waiting to ice. My motor slowed considerably at the 8 minute mark so definitely setting firm. Verdict yummm.

jo nz - Oh my goodness.  Just made this and it's cooling now.  The nibbles I've had a yummy, and it's just amazing that I can now make my favourite café slice at home.

DJ - Made this today with left over puff pastry in fridge. Used large Pyrex dish. Custard slightly wider than pastry. It cut ok. Used 180g sugar. Still a bit sweet for us. Ran out of custard powder so made up difference with more cornflour. Sprinkled sliced almonds on top of glacé icing.

Bonsai - Super quick and easy to make. I owed a work colleague A LOT for work he did and know he has a weakness for vanilla slice. I added tinned passionfruit pulp to icing sugar plus a squeeze of lime juice for icing, just wonderful. Enough to share around the office tomorrow.

This is a great recipe  ;D thanks for posting it! Has anyone else tried it? When my dd makes Vanilla slice she bakes the pastry between 2 trays with a weight on top.

Bit of a run on this one - it's great and so easy.  I cut the sugar to 180g and it was delicious.  Vanilla slice is one thing DH will eat in the dessert line so I'm sure he will do his share of the eating of this one.

Mine won't last long astarra.  Gave 4 pieces to Mum, 2 each to 2 neighbours and we are having 2 pieces each a day.  By tomorrow night it will be all gone and I only made it yesterday.  Nothing has moved as quickly in this house as this one  ;D

I agree with Mandi, the custard probably wouldn't survive in tact :P

JD  You must have been very sheltered to have missed that one.
The very very best 'snot block' comes from the Pinnaroo Bakery. 
They are evn better than the old Balfours version.,

You guessed it.  I am a bit of a connoisseur of the humble 'snot blocks'.

I've never heard them called that either, and they're one of my favourites!
I used to love the Balfours ones, but now I think they're pretty tasteless. My local bakery does a fantastic one with passion fruit icing. I try hard to stay away from the bakery as its bad, bad, bad.
Mind you, I can't wait to try this recipe.

I'd really like to try this but I don't want to use custard powder - since a major reason for getting a TMX was to cut down on packet stuff. Does anyone have a suggestion/alternative?

Deedub, I know what you mean.  Before I bought custard powder I checked out  the ingredients and I think the one I ended up with was Organ ? ??    The custard powder gives the slice the ' authentic ' colour.  I would not want to fiddle with the recipe as it is of a perfect consistency.

This recipe looks great! I have just been to the shop to grab what I need, but realised I am also out of cornflour  :( Do you think Tapioca flour would be ok?

Very excited that everyone seems to like this recipe!

I recently made some for a school fund raiser, sold each slice for $3 a piece, and people were coming back for more.

I am about to make with lattice biscuits as I have run out of pastry. I think they will probably be sweet enough without icing. Will see how they go.

Good to know about the Sao's knittercook, as the lattice biscuits were a bit disappointing. They didn't really stick to the custard like the pastry does, and were not a great fit for my tupperware container. I will definitely give the Sao's a go if I don't have pastry on hand next time.

I only put 200 g sugar in - quite sweet enough!

But I found the custard too thick for my taste - it immediately set to a jelly-like almost rubbery consistency - I will try it again with less cornflour - perhaps 100g thickener altogether - 50g custard powder and 50g cornflour with the 2 eggs should be enough for the almost 1 litre of milk, I think. ;)

Juanita did you add the butter at the end? The butter is really important as it seems to stop the custard from having that horrible rubbery texture. I learned that when I forgot to add it one time.

I made this today and YUM YUM YUM.  My DH's parents are coming over tomorrow with DH's Uncle who's here on holidays from Scotland so plenty of people to eat them !   Just had a try and they're not quite set enough but they taste amazing !!!

On Wednesday we arrived back from a 2 week cruise to NZ so I'm slowly easing back into cooking (since I've finally done the piles and piles of washing).   I'd rather cook sweet stuff than meals lol

Yehh we had a great time thanks Cookie, although we missed Dunedin and Fiordland which was a real shame especially because we were meant to go on an amazing train trip in Dunedin for my youngest son's 4th birthday, but never mind ! They were forecasting 7-8mm swells so they turned the ship around and headed back North to Bay of Islands but it was pouring down there. The rest of the trip was great though and great weather too ! Only wish I could stop rocking now I'm off the ship. I keep bumping into things and leaning on things like I was on the ship ....... it always takes me a couple of weeks for it to go completely ! Strange feeling though !

Made this tonight as my DH needs to "take a plate" to work tomorrow for their Secret Santa morning tea.

I e just made this and forgotten to add the butter. The custard is very rubbery >:(

Thanks Judy, that's what I did. I removed the custard, grated the butter into it,  reheated it for a couple of minutes, and then puréed it until it was smooth and silky. It was amazing what a difference the butter makes.
I iced it, and it was devoured at our street Christmas party tonight. I didn't get a chance to take a photo before it got eaten. :)

Success, that's what I like to hear.  Bet there were plenty at your street party - when Katie & I dropped you off recently there were so many kids playing in the street, it was amazing to see.  We have no kids in our cul-de-sac, a couple of teenagers and that's it.

Thought I would bump this even though you shouldn't really make it because you will be compelled to eat it because it is soooo good!

I had family staying with me a couple of weeks ago so made this for dessert one night. My teenage nephews could not believe their luck, my sister now thinks she needs a thermomix!  ;)

Childhood flash back to vanilla slice made with saos and passion fruit icing for the seimming squad BBQ. I thought mum just used a carton of long life custard and was planning to just use EDC custard. Might try this custard instead as DH will prefer it to be like the shop bought one

Thermesa, it needs to be very, very thick custard to set. The EDC version wouldn't be thick enough I don't think. I tried previous to this recipe the sao version and the lattice version ......... they don't even come close (sorry) ! This recipe is fantastic.

Mmmmmm yummy isn't it ! I just need to get the perfect size container for it. I use one of those square plastic Sistema containers from Woollies. The pastry sheets are slightly smaller so the custard hangs over a little bit on one side. Not really a problem, I just cut them off and eat those bits lol. The perfect size would be great though !

Great Bedlam, it's pretty easy to make too.

My DH has been taking this for his nightshift snacks this week. We have dinner early when he's on night shift so he needs a snack later on ..... not much left now though, it keeps disappearing out of the fridge !

Oh my goodness.  Just made this and it's cooling now.  The nibbles I've had a yummy, and it's just amazing that I can now make my favourite café slice at home. 
Mum's coming down for a visit tomorrow, so I thought this would be a lovely morning tea for us.  Of course I will have to test it for quality control purposes before then  ;)

Mine definitely slowed down a lot too - I had to actually up the speed for a little bit as the top was just not moving. 

So simple to make...although I am sure I'm going to make a hash of at least one piece getting it out of the container (I used a sistema one too).

Have just made this and popped in fridge. My container was slightly smaller than the puff pastry sheet, so I trimmed pastry to fit, but I think this may end up meaning the slice is too thick? I wonder if I'd be better using three sheets of puff and a rectangular container? (1& 1/2 sheets of pastry on top and bottom). Anyone else have thoughts on that? I also lined the tin with glad wrap hoping to make removal easier - is that necessary?

I've also used just 180g sugar and the custard tasted sweet enough, but I'd probably increase vanilla next time too.  My only concern is probably how welli t is going to set.  I ordered a "natural" custard powder only to discover it wasn't the orgran I was expecting, it was some odd egg-free type!! Fingers crossed!!

So, the big question is, now that it is in the fridge, how long do I wait before it will be set? ;) and what is the best knife to use to cut it?

It will need a few hours and preferably overnight if you can wait that long LLL, I think I used a serrated knife to cut mine.  If you don't have the correct sized tin, I can't see why you can't cover the base of what you use with pastry by cutting another sheet to fit or cutting 1 sheet to fit a smaller tray. Try to cut the slice for serving along that join line though.  When you're pouring out the custard just stop when you think the thickness is just right for a custard slice if using a smaller tin.  It's probably easier to cut the slice neater if you lift it out of the tin and onto a bread board so using glad wrap or baking paper in the base is fine.

Unfortunately it didn't set as firm as I would expect - held together while I cut it, but too sloppy to be held in the hand and eaten.  I expect it was my odd custard powder so will not hesitate to try again with a normal custard powder.  Flavour was delicious!! Thanks again :)

Made this today with left over puff pastry in fridge.

Used large Pyrex dish. Custard slightly wider than pastry. It cut ok.

Used 180g sugar. Still a bit sweet for us.
Ran out of custard powder so made up difference with more cornflour. Sprinkled sliced almonds on top of glacé icing.

Here is pic, in fridge with cling film on top. I think it would make 18 slices.

Bumping this, super quick and easy to make. I owed a work colleague A LOT for work he did and know he has a weakness for vanilla slice. I added tinned passionfruit pulp to icing sugar plus a squeeze od lime juice for icing, just wonderful. Enough to share around the office tomorrow.

I made this with SAO biscuits on the weekend as the temperature was over 40C - way too hot to turn the oven on!
They worked really well, but I was disappointed by the custard as I used a different brand of cornflour and it was quite grainy as a result.
I wouldn't hestitate to use the SAO biscuits again, but will be ditching the packet of cornflour in the cupboard and reverting to my normal brand.

I've just made this for our Probus birthday party on Friday.  I recently had a slice like this in a cafe and the topping was nice and creamy, not like the usual icing sugar/passionfruit version most people use.  How do you think this Creamy Vanilla Frosting would go http://www.forumthermomix.com/index.php?topic=6722.0.  If I do use the passionfruit icing I would want it to be quite firm not runny like I see in quite a few pictures of this dessert on different websites so if anyone could tell me the correct ratio I would appreciate it.

It has to be, literally, decades since I iced anything Judy, but when you are making the icing would it be worth starting with a really thick icing mixture then slowly and carefully watering it down until you get the texture you are looking for?  You have probably thought of that already, though.

Yes Marina but then I'm not sure how hard it sets afterwards, that's the problem I think.  I'd hate it to crack when I cut it, I just want it firm enough not to run all over the place.  I still have a few hours to decide what to do but I'm leaning towards the creamy frosting as I know how that ends up.  I'd cut the slices then pipe the icing on.
