Here is the recipe rather than a screenshot.
BOILED FRUIT CAKE (from Sunbeam)
Ingredients:
500g mixed dried fruit
½ cup sherry or brandy
240g water
125g butter cubed
40g golden syrup
220g brown sugar
1tsp bicarbonate soda
1tbsp boiling water
2 eggs
150g self raising flour
150g plain flour
½ tsp mixed spice
¼ tsp nutmeg
1tsp vanilla essence
blanched almonds for decoration
Method:
Soak fruit overnight in brandy or sherry.
Place butter, fruit, water, golden syrup and sugar in tmx bowl and cook 15 mins, 90°, speed soft, reverse.
Combine bicarbonate soda and boiled water in mc.
Stir into mixture and allow to cool for 15 minutes.
Add rest ingredients and mix 20 seconds, speed 4, reverse.
Pour into lined 20cm square or round cake tin and decorate top.
Bake 160° for 1¼ to 1½ hours. Cool in tin.
Make 12 muffins using 2 liners per muffin. 150° 40-50 minutes.

All made,cooked and cooled. :)
I decorated with flaked almonds and quartered glacé cherries.

Looking at your cake CC I am very pleased that I put the fruit in to soak last night. I was planning on taking this away but perhaps we will eat this one and I'll make another 2-3 to take away.

Beautiful looking cake CC. I will post a photo of mine but not as lovely as yours. I made it in a baguette tin thinking I might have just a small slice at a time. Didn't work out as head 2 slices to check that it was ok. :(

Well, I have to admit that I do not like fruit cake, AT ALL! But for some unknown reason I decided to bake this this weekend and fell in love :o! I nearly stuffed it up (forgot to put the water in until it had been cooking for about 5 minutes) but it turned out wonderfully. I also forgot to do the top decoration, but that's OK. I found out that my neighbour loves fruit cake so he has gone home with a big chunk. I will keep a small piece for myself and the rest I will give to my colleague at work.
I am pleased to see that your cake cracked on the top, Chookie, because mine did as well and thought it was something I had done wrong, so I don't feel such an amateur when an experienced baker has the same happen to her cake! Do you know why this happens?

Mine cracked too, I didn't worry when I saw Chookie's. The flavour of this is amazing Kimmy.

I have no idea why it cracks on top. Maybe to do with the ratio of fruit to cake. I forgot to mention that I put a tablespoon of Cumqut marmalade in the mix. The tin I used has 3 long slots and I used the 2 outside ones. I love the idea of small slices.
Marina glad you have discovered the joys of fruit cake. You might also like the Pineapple Fruit Cake. It is made with a tin of Crushed a Pineapple.

After seeing all your lovely cakes, DH mentioned it was a while since I've made this and that some fruitcake would be nice. For a change. I used a 20cm square tin and as you can see, the top cracked a little too.

Thanks Kimmy - I made this in the square tin with blanched almonds on top. I love the idea of the two bar tins as well (good excuse to buy baguette tins) and the top decorated with flaked almonds and cherries looks wonderful. As DH declared it the best cake ever I will certainly be making it again with all the other ideas. Cake making is not my forte so great to find one that has the thumbs up.

That would be a good idea Chookie. I have been known to inject my Christmas cakes with spirits. The worst part was asking for the syringe at the chemist.
