Title: Quick Tuna pasta dish
Post by: Millipede on October 16, 2011, 11:24:41 am
I make a quick tuna pasta dish that can be pared down to 5 ingredients:

Onion
1 300g tuna
1 400g tin tomatoes
1/2 cup stock
cooked pasta/spaghetti

Lets call it a pasta sauce recipe then and it will only have 4 ingrediants  ;)

Saute 1 chopped onion (and garlic if you have it) in oil. Drain the tuna and add it to the onions and let it heat through. Add the tin of tomatoes, including the liquid and approx half a cup of stock (also a tblspn of tomato paste if you have it), then let your sauce simmer for approx 10-15 minutes (ie while your pasta cooks).

Serve your pasta sauce over cooked pasta with some parmesan cheese.  ;D

JD posted a recipe based on this one but with additional ingredients - see below.

Jess ums - added a teaspoon of curry power to the recipe - JD's I think.

I moved this from a chit chat thread after trying it today with slight variations.

1 large red onion cut in half
1 tblspn olive oil
1/2 tsp Tenina's garlic paste
400g can chopped tomatoes
1 tblspn tomato paste
1/2 cup chicken stock
400g drained and flaked can of tuna
1 cup frozen peas & sweetcorn
S & P to taste
A handful of grated parmesan and chopped parsley, divided

Chop onion 2 sec/speed 5.
Add oil and sauté 5 mins/varoma temp/speed 1.
Add the garlic paste, tomatoes, tomato paste, chicken stock and cook 10 mins/100o/speed 1. Remove the MC and place the steaming basket on top for the last 5 mins to thicken the sauce.
Add tuna and peas/corn.
Cook 5 mins/100o/reverse/speed 1
Season with S & P to taste. Quite a bit of pepper gives it a nice spicy taste.

Set aside and make a batch of mashed potato.  Line the edge of a casserole dish with the mash, dot with butter and place under a preheated grill to brown then pour the tuna sauce mixture into the centre of the dish.  Sprinkle with combined parsley and parmesan, pop back under the griller for a few minutes then when serving, sprinkle a bit more parsley/parmesan mixture over each serve.

Reheats well in the microwave.

Messy looking picture but it tasted really nice. Thanks Millipede, glad I found this recipe.

You could use the tuna mixture as a base and pipe mashed potato over the top or serve over pasta as Millipede has suggested.

Made this tonight for the first time. I've only had my Thermie for a few weeks but the family liked it. I always use brown onions and hadn't thought to use a red onion in this dish. The only thing I added was a teaspoon of curry powder.

Glad you enjoyed it Jess, why not pop over to the Introduction thread on the home page and tell us a bit more about yourself - eg how long you've had your Thermomix, how many you cook for and what you've been cooking.
