Passionfruit butter recipe anyone?

Since we had quite a glut this year, I'd love to find a nice easy recipe!

Ceejay, here is a recipe from my files which was really nice, I'm sure you could convert easily enough.   :)

PASSIONFRUIT CURD CUPCAKES

Passionfruit buttercake
90g butter, softened
½ cup (110g) caster sugar
2 eggs
1 cup (150g) SR flour
¼ cup (60ml) passionfruit pulp  (3-4 passionfruit)

Passionfruit curd                Decorations         
2 eggs, beaten lightly               85g packet passionfruit jelly
1/3 cup caster sugar               1 cup (250ml) boiling water
1 tblsp lemon juice               1 cup (80g) desiccated coconut
¼ cup passionfruit pulp            ½ cup (125ml) thickened cream, whipped
60g butter, chopped coarsely

Make Passionfruit curd
Combine ingredients in a small heaproof bowl, place over a small saucepan of simmering water, stir constantly until mixture thickens slightly and coats the back of a spoon.  Remove from heat.
Cover tightly, refrigerate curd until cold.

Makes a lot of curd, so could halve quantity.

Preheat oven to 180c/160c fan-forced.  Line 6 hole texas or 12 hole standard muffin pan with paper cases.
Beat butter, sugar, eggs and flour in a small bowl with electric mixer on low speed until ingredients are just combined.  Increase speed to medium, beat until mixture is changed to a paler colour.  Stir in passionfruit pulp.
Divide mixture among cases, smooth surface.
Bake large cakes about 25 mins, small cakes about 20 mins.  Turn cakes onto wire rack to cool.  Dissolve jelly in the water.  Refrigerate about 30 mins or until set to the consistency of unbeaten egg white.  Remove cases from cakes.  Roll cakes in jelly, coating all over.  Roll in coconut, place on a wire rack over tray.  Refrigerate for 30 mins.
 
Cut cakes in half, fill with curd and cream.

That recipe is very similar to lemon butter in EDC, but with passionfruit added.  So you could use that recipe as the base of the conversion.

Hello Everyone. I was just wondering if any one has tried making
passionfruit butter in their tmx. I tried some the other day and turned
out ok but am looking for better recipes. And has anyone tried making
custard with custard powder or with just eggs? I have never heard of

eggs thicken the custard any way? My recipe for the passionfruit butter
is:

4 eggs
2 cups white sugar
12 passion fruit
juice of 4 lemons
1 cup butter

I put everything in the bowl and cooked it for about 10 min. It still
wasn`t thick so added another 2 eggs and it thickened up a bit more.
But it still isn`t as thick as the one that I normally make on the
stove top. Any one have any ideas as I have a heap of passionfruit at

I'm experimenting with a few recipes and will let you know how I go!

Thermomixer, there seems to be a lot of sugar as well in that last recipe.... might reduce it. :)

Yesterday I tried:

2 tbsp sugar
1/2 cup passionfruit pulp
1/4 cup lemon juice
125g butter
4 eggs

Insert butterfly into bowl. Put all ingredients into bowl.  :-: temp 80 deg, 9 mins speed 3.
Pour into sterilised jars and seal.

Not bad but needs a tad more sugar and possibly reduce the lemon (not sure if that's because the passionfruit was a bit tangy though.  :P)

The latest GoodFood magazine has "Quick & Easy Passionfruit Butter" for the microwave that could be adapted. It has no lemons!

Whisk 4 eggs & 3/4 cup caster sugar in microwave-safe bowl, stir in pulp of 4 passionfruit & 100g unsalted butter chopped. Microwave uncovered at 30% for 7-10 minutes until coats spoon, whisking every minute.

Hey C   ;D DId you end up figuring out a good Passionfruit Butter recipe?  I have a huge bag and remembered you have been on a bit of a passionfruit cooking binge lately

I've tried 2 so far but not quite what I was after Shereen.... one wasn't sweet at all and the second is ok but I want more tang... when I finish this lot and the lot my neighbour gave me for giving her some eggs and baking powder a few months ago, I'll adjust it again.  ;)

I bottled some passionfruit butter/curd today from my stovetop recipe. Worked perfectly - very happy. All your recipes helped with my conversion (also TMXer's AKA Wookie's Lemon butter helped) - THANKS  ;)
This is what I ended up with:
4 eggs (use to strain - no need now)
185g  sugar
peel off off large lemon or 3 tsp zest
80ml lemon juice
125g passionfruit pulp
200g unsalted butter
Sugar and lemon peel in bowl blitz for 10 sec on speed 7
Add all other ingredients. (When adding lemon juice sooo easy to place lid and MC on bowl and squeeze with hand, measuring as you go and lid catching all the seeds.)  ;)
Put on 70oC speed 4 for 12mins
Spoon into clean ,warm jars. and seal while hot. Refrigerate when cool. Keeps in fridge for 2 months (write date on it ;))
makes 2 1/2cups or 600mls

My end of year teachers hampers are shaping up and lookin good.  ;)

Good work Nay- nay  - did you use the reverse while cooking - don't suppose the seeds would be bashed up too much at that speed?

Wonder if the butterfly might be useful?  Probably not?

Oh - yes forgot to mention i did use the butterfly only because I saw it through this recipes. And i forgot all about putting it on reverse but seeds are all intact.  ;) So thank you to Intrepidtrier Sandy too.
