Welcome mcm12183. I have found with the concentatred stock I do not need to use so much rock salt as I usei it up quickly. You will have a few disasters along the way but that is what we are here for. It is all good fun. I bet you will be eating the soup for some time!

Go with the basic bread and home made butter for starters and one of the yummy easy desserts. You can then tell him how cheap the bread is compared to what is on the shelf in the supermarkets. When you can get marked down cream of any kind make the ice cream. Costs practically nothing compared to $7 a litre or more for the good stuff! Good luck and have fun. Gretchen

What a pretty and innovative soup. Must try it. What about a papaya soup in an oval bowl! Lemon soup with white chocolate pips? Endless fun here with summer on the way. Well it is always summer in Cairns.

Oh I agree with quirky cooking about Pan Dulce. Often this is served with Sapotes. In tropical North Queensland we have a chocolate Sapote which would be ideal. Very yummy. Galletas De Nuez or nutty cake is a go-er. Just mix equal amounts of finely chopped pecans with caster sugar, say 250 gms each, with 2 eggs an drop onto baking sheet. Bake at about 180 for 10-12 minutes. Or just pour it all on a baking sheet and break it up later.
In Mexico they also eat a lot of seafood so any spicy dips are good with prawns. A guacamole would look colourful with prawns. Also Ceviche or raw fish salad is good for a starter.

Well Tassie gal, if I lived there I would be making raspberry everything. You re so lucky with the produce you have in beautiful Tasmania. I see mangoes growing bigger by the day here in Cairns so am looking forward to my first Mango Daiquiri of the season soon.

Hi Sam I am Gretchen and live in Cairns as well. Anything I can do to help please let me know. The more demos you can go to the more it will help you. I use my TMX at least 4 times a day everyday.
