Meringue in the microwave

I got this idea from Not Quite Nigella's blog - mix 2 cups of icing sugar with 1 egg white to make a soft dough (I mixed my Dough by hand and needed a bit more sugar to stop it being too sticky).

Cut in to 16 pieces and roll in to balls. Line microwave tray with baking paper and place 4 balls on the edge of tray (space them out) and cook 45 seconds (1200W microwave)). The meringues puffed up and were crispy at this stage. If they are still soft increase cooking time by 5 seconds.

Cool on a rack and repeat with remaining mix, 4 balls at a time.

They are not quite like oven made meringue but so quick and easy!

They would be handy for a quick Eton Mess to to put beside a fruit coulis that you were serving with something. Thanks.
May all dairy items in your fridge be of questionable vintage.

I'm sure you could do smaller balls for less time to give biscuit size bites. The ones I made were about 6cm diameter.
