Asparagus, Zucchini and Goat's Cheese Loaf:
Number of People 4-6:
Ingredients:
1 bunch of asparagus
3 zucchinis
1 onion
1 cup SR Flour
5 eggs
½ cup cheddar cheese, grated in TMX
1/3 cup frozen peas
1/4 cup olive oil
few chopped mint leaves
2 tablespoons parsley
120g goat's cheese, broken into pieces
Preparation:
Preheat oven to 2000C
Line base and sides of a 21.5cm x 8cm loaf tin.Leave lining to over hang.
Steam the asparagus in the varoma for 5-7 minutes. Varoma temp.speed 3. Put into cold water. Cut a 6cm piece from the top, set aside. Cut the remaining asparagus into 2cm lengths.
Place zucchini pieces into bowl. Chop using turbo until in largish pieces. Set aside.
Place onion into bowl, chop speed 3 a few seconds. Add eggs, mix speed 3. 7 seconds.
Add zucchini, flour, cheese, peas, oil, herbs, sliced asparagus and half the goat's cheese. mix using :: until you feel it is mixed enough.
Spoon into prepared tin.
Bake for 1 hour. mine took a bit longer
Cool in tin.
I have just made this from this recipe and realised I neglected to say, place the asparagus spear heads on the top and sprinkle with the rest of the cheese. Sorry. :-\

It is! The last time I made it I used feta instead of goat's cheese. It is a little cheaper. Similar taste though.

Is it like bread? Or do you have it with something as a main meal?

It's just like a quiche made in a loaf tin. I guess you could make it in a quiche dish but I like the idea of a loaf. It is especially nice cold.

Cookie1 - This was nothing short of amazing!
I made this, well for those of you who have read my other posts you will now know that "I" actually means me and my YouTube taught TMX expert mum on Saturday night.
We were trying to find something that accompanied a couple of very fine lamb chops but I wanted to make something that my mum would appreciate as she doesn't eat meat. We, especially her were getting a touch bored with her eating only the vegetables that we (the carnivores) were eating. Time for a change! What could we make that would be tasty and fulfilling for a veggie but also be able to hold its own with a damn good chop...........well this absolutely hits the spot!
Much fun was had gathering all the tasty ingredients except we substituted the goats cheese for Feta. Mainly because I left the shopping late and that was all that remained..... :-[. Anyway, with all the ingredients collated and sorted it was time to follow the ever helpful TMX forum guides / recipes. Oh so so so much easier than the freestyle route that I embarked upon the other night!
After adding all the ingredients and letting the machine of wondrousness spin its magic (and I am not talking about my helicopters there) the mixture looked like this after the TMX and that after the cooker. We cooked it for just over the hour mark as someone kept on opening the oven to 'smell' the amazing concoction contained within. It is at this point that I defy ANYONE to resist the urge to open the oven and check on this 'loaf'. The smell, aroma, addictive wafts emanating from your cooker will test the resolve of the strongest person........!
If the risotto, creamy butternut squash, lentil curry didn't win my veggie, TMX novice (says the typing expert........) mum then this loaf absolutely sealed the deal. She absolutely raved over this recipe to the point of fending off any would be takers for the slice that remained - that was firmly claimed by her for lunch the following day.
Thanks very much for the recipe. It really is a great way to cook, and the best bit is we know exactly what goes in!

I made this in 2 tins measuring 11 x 21cm and cooked them for 40 mins for the larger one and 35 for the thinner one for Mum. I used feta instead of goats cheese and it was really tasty. Thanks cookie, lovely recipe.

Yes thanks to RC I made this also. Unfortunately my DD took it out of the oven too early, tasted delicious but not good to photograph. I like Judy's idea of the long tart tins, not so long to cook. I will be making it again,thanks for posting Cookie.

Oh dear Troupie, I've no idea why you can't see them. I upload to Photobucket and link from there but you are the first one (who's told me anyway) that can't see them. Very strange. Maybe Google to see if there's any answers there. ???
