Marzipan - Amaretto Truffels

Makes about 35.

200g confectionary chocolate, in pieces
100g cream
50g soft butter
3 tbsp amaretto
100g marzipan, in pieces
cocoa powder (to coat balls)

1.  Put the chocolate into the tm bowl and grind 8 secs / Turbo.  Remove and reserve.

2.  Put the cream in the tm bowl and heat 2 mins / 80oC / speed 1.

3.  Add the grated chocolate and all the other ingredients (except cocoa powder) and stir 30 secs / speed 3.

4.  Pour into covered container and put in fridge for ca 2 hours.  Then remove from fridge, and using a teaspoon, take hazelnut size pieces.  Roll them with your hands into balls, then roll in the cocoa powder.  Leave the balls to firm up in the fridge, and store them in the fridge.

Interesting method - have to give it a try.  Do you have any recipes for marzipan from almonds?
