How would this go as cupcakes? My DS11 has a cake stall and someone has asked for gluten free, but most I can see have nuts too which we can't have at school. I have m,ace the magic bean cakes and they were good too, so if this won't work as cupcakes that will be the fall back.

I have made this as cupcakes before without any problems, so give it a try.
I would use the smaller type of cupcake papers rather then larger ones as they are quite rich, and won't rise very high.

Congrats es and thx.. I have a girlfriend in france who has been looking for a gf df nut free cake.. She can use egg replacer.. Her kids have so many allergies so thx.. Will have to ask if chickpeas are ok

Made 2 of these cakes today as my family is newly GF and DF. Used almond milk. Worked out beautifully :)
Made a chocolate/almond "cream" to serve with slices for dessert tonight. Melted some 70% cocoa Lindt chocolate (DF) and mixed through some almond milk. Delicious :)
