Title: Fudgy Chocolate Cake (GF, Dairy Free)

This recipe has been adapted for a Thermo Chef

Serves 6-8
Ingredients:
400g (1 1/2 cups) of cooked chickpeas, drained & washed
4 eggs
2/3 cup orange juice (Approx 2 oranges)
zest of 1 orange
2/3 cup packed, brown sugar
1/2 cup dutch cocoa
2 teaspoons of GF baking powder
1 teaspoon of bi carb soda

Method:
Preheat oven to 180C
1. Puree chickpeas and orange juice on speed 7 for about 10sec, or until smooth.
2. Add eggs through hole in lid one at a time, speed 4/30 sec.
3. Scrape sown with a spatula
4. Add sugar, cocoa, zest, baking powder & bi carb soda & mix on speed 4 for 5 seconds, or until just incorporated. The batter will be really runny.
5. Pour into a greased & lined 20cm (8") square tin.
6. Bake in oven for approx 45-50 minutes, until a skewer inserted into the middle of the cake comes out clean.
7. Remove from oven and let cool on a rack for 15 minutes before removing from tin.
8. Serve dusted with icing sugar.

Hints, tips:

This is yummy served with raspberries, but can also be iced.

A variation would be to add 1 cup of chocolate chips or walnuts.

I used a tin of chickpeas, but you could easily cook your own. It's important to remove any loose skins before pureeing.

This cake should keep for about 5 days if tightly wrapped, as it is very moist. However, I would store in the fridge in really hot weather.

I saw a similar recipe on the internet and was thoroughly intrigued by the thought of using a tin of chickpeas as the basis of a sweet cake. So far, no-one has been able to pick that the main ingredient is chickpeas. It's nice to find a gluten free cake is moist, contains no nuts and is really yummy.

Thanks Cornishcream, I found the cake stand at a fete a couple of months ago. I think it cost me $3!
Sorry about the poor quality of the photo, but I remembered to take a photo just before we ate it and the light was really low.

I buy extra large free range eggs which weigh 700g/ dozen or 59g each.

Nice conversion ES. Thanks for mentioning the TC.

We have a cookie (http://www.forumthermomix.com/index.php?topic=1489.0) on the forum which uses chickpeas too and that is really nice. What they don't know won't hurt them  ;)

I made this today and it is delicious!  I doubt anyone would know it's made from chickpeas or even that its gluten & dairy free.

I'll be making it again on Sunday for a dinner with my in-laws and some relatives down from QLD (one of who is gluten free). I'm also making a gluten free lemon & blueberry cheesecake.  I think it will go down a treat  :D

I made it today as a trial run and it turned out perfectly.  Thanks for the recipe Emerald Sue  :)

Thanks for the recipe. Love to have GF & dairy free recipes on hand. I have made biscuits with chickpeas and they are great too so will be keen to give this cake a go when there are no eyes watching to see what the ingredients are.

perhaps you should add a pic of the cake with the first prize certificate/ribbon you clever girl  :D (could even rename it "Show Stopping Fudgey Chocolate Cake etc)  ;)

How would this go as cupcakes? My DS11 has a cake stall and someone has asked for gluten free, but most I can see have nuts too which we can't have at school. I have m,ace the magic bean cakes and they were good too, so if this won't work as cupcakes that will be the fall back.

I have made this as cupcakes before without any problems, so give it a try.
I would use the smaller type of cupcake papers rather then larger ones as they are quite rich, and won't rise very high.

Congrats es and thx.. I have a girlfriend in france who has been looking for a gf df nut free cake.. She can use egg replacer.. Her kids have so many allergies so thx.. Will have to ask if chickpeas are ok

Made 2 of these cakes today as my family is newly GF and DF. Used almond milk. Worked out beautifully :)
Made a chocolate/almond "cream" to serve with slices for dessert tonight. Melted some 70% cocoa Lindt chocolate (DF) and mixed through some almond milk. Delicious :)
