Chit Chat / Master class - making Canapés

I've been away for a Hen's Party Cooking Class!!! This is what we made:
Canapés
1) Freshly made Makizushi (sushi)
2) Confit Duck and Foie Gras tortellini w/ lemon Beurre Blanc
3) Mushroom Galette Confit Cherry Tomato
4) Beef Kofta with a Mint Raita
5) Salmon Perls with a Verjuice Dressing

Has anyone had the second one??? Do you know what it is??? Goose Liver - we were all like "what!!!!" but it was the most divine little morsel ever!! And guess what I even won ~ a bottle of wine.  8)  LOL - ok I've had my little boast now - I have all these recipes if anyone is interested.  ;)

Desserts / Tarte Au Chocolat (Chocolate Pie)

Featured in the ‘Travelling with Thermomix’ cookbook, this delicious recipe for Chocolate Pie is taken from
the France section. The thin hazelnut and pastry layer blends perfectly with the chocolate topping that
gently melts in your mouth.

Chocolate Pie
Dough Ingredients
25g hazelnuts
80g butter, cut in pieces
50g sugar
1 egg
180g flour
Dough Method
Place hazelnuts into mixing bowl, pulverise 10 sec/speed 9.
Add butter, sugar, egg and flour, knead 30 sec/speed 5. Form dough into a ball, place into a bowl, cover and allow dough to rest in fridge for 30 minutes.
Pre-heat oven to 180ºC.
Roll out dough into a circle (approx 26cm), place in buttered, floured tartlet form (24cm). Prick dough with a fork, cover with baking paper, scatter dried peas (or similar) over baking paper and bake in preheated oven at 180ºC for 15 minutes. Remove dried peas and baking paper from pre-baked pastry, turn oven temperature down to 120ºC.
Topping Ingredients
200g dark chocolate, (50% cocoa) cut into pieces
150g cream
2 egg yolks
50g sugar
Topping Method
Place chocolate into mixing bowl, grate 6 sec/speed 8.Add cream, melt 6 min/90ºC/speed 2.
Add egg yolks and sugar, mix 1 min/speed 3.
Pour filling over pre-baked pastry. Bake at 120ºC for 30-35 minutes; Allow to cool before serving.

Rich chocolate macaroon tart:
Ingredients:
• 1½ cups desiccated coconut
• 1∕3 cup sugar
• 1 tbs plain flour
• 2 egg whites, lightly beaten
• 1½ cups (80g) roasted macadamia nuts
• 300ml cream
• 300g Plaistowe 70% cocoa
• 4 egg yolks


Preparation:
1. Preheat oven to 150º C.
2. Combine coconut with sugar and flour, mix well, stir in egg whites, mix to combine. Reserving ½ cup mixture, press remaining mixture into base of 23cm springform pan.
3. Bake 15 minutes until golden.
4. Press reserved coconut mixture firmly into star cutters to shape on greased oven tray, remove cutters, bake 10 minutes until golden.
5. Sprinkle macadamia nuts evenly over base.
6. Heat cream in pan without boiling, add cocoa, stir until combined, stir in egg yolks, carefully pour over base, refrigerate until set.
7. Just before serving place star macaroons over top, if desired dust with icing sugar.

Serves 20

Meegles - I've just made this, my base didn't go golden, except around the edges, I didn't like to cook it too much longer as the edges would start to burn.. I made the macaroon stars and same thing.. Just wondering what I did wrong, I followed the recipe except I used Gluten free flour, but I can't see this making the difference... Still, the tart looks good, so i will report back tomorrow on how it tastes.

Update - I need the advice of people who can actually cook, I can't, but Dobbie is making me look good!! I made this tart yesterday and the taste is amazing but it really didn't set very well... yes it was very hot weather, but even straight from the fridge it didn't hold its form, even this morning it is still quite sloppy... So I am wondering if there is something that I could put in to make it more like a cheesecake consistency, like gelatine??? Thanks all!!

Tips and Tricks / Trouble shooting – Most common issues and action

Scales playing up – clean feet, make sure cable at the back is out, check MC (weight should be 20-30g), bench top should be clean and dry

Loud noise, high pitch noise – a drop of sewing machine oil in the middle, where the blades are sitting. (not on the blades but in the little dish)please don't do this "just in case" only do it if there is a noise.

Leaking at the top – new seal needed, not to take the seal out after each use, don’t tap a spatula or a spoon on the rim of the bowl

Kneading function is not working if bowl is warm (over 60 deg)

Heating not working properly- the time will depend on the room temperature and speed used

Butterfly comes off during use – put butterfly on the short side of the blades, it locks in better

Error 51 – wet bowl, dry the prongs

Error 65 – too fast, not waited for the zeros to come on

Cuts on the spatula – take food out by going against blunt side of the blades

Burned bottom – halving recipe not reducing cooking time,

Cleaning bowl – bi-carb soda and soft cloth
 
Error 32 or 55 – contact service department

TM doesn’t turn itself off – still in lock position on speed dial, it has to be unlocked

Smell from the bowl – wash and dry, leave open overnight to air dry

Keep your eyes peeled for the August Edition of Master Chef magazine. It is much bigger and better than it's last appearance! A full page advert - It will be the first of a 6 part print campaign that will carry a strong Thermomix branding, product and recruitment message right up until and including the Feb 2011 issue. Cakes / Basic Plain Muffin Mix - add your own favourite flavour.

Can you have too many muffin recipes on here??  :-)) No - I didn't think so.  :D ;)
Plain Muffins
300g Flour
3tsp baking powder
50g sugar
1 egg
250g milk
50g butter
Add all ingredients and mix on speed 4-5 for 15 secs
I used this basic mix to use up some stewed Rhubarb I had in the fridge by putting a tbsp of mix in paper/tin then adding tbsp of rhubarb then topping with more mixture. I also have done this with Rosella jam and worked well too.
Other Variations include:
adding 1 cup of cheese to make Cheese muffins
adding 1/2 cup of chopped dates, craisins, sultans etc for fruit muffins
or adding grated orange rind and 50g of orange juice (reducing milk to 200g) for orange muffins

CC - Made these this morning to take to my weekly morning upholstery class. Thumbs up from all the group Nay-nay. The cheese ones have now been requested by the group.

Carrie - Just made these this morning, with mixed frozen berries. Very yummy. Next time I'll buzz the larger strawberries up a bit first maybe... they're quite chunky in the mix but then it does go lovely and gooey where they are so maybe not! A little bit of jam in the mix before the berries would have been nice too, to give the mixture a nice flavour too. Thanks for the recipe Nay!
Made these again today with a banana and 40g choc chips. DS will love them.

Nay-nay - Mmmm.....just tried reducing milk to 150g and added 100g of cranberry juice and a couple handfulls of dried cranberries.....Yummy! I have done coconut before and I just added about 60g and a tbsp of coconut oil so just add in your coconut and see what the mix looks like to you and add a little milk if you think.

BZB - Choc chips & raisins for my little man. Added raspberries for his big bros. Turned out quite dry. Prefer CreamPuff's posting for muffins.

Desserts / Rhubarb Cream Pie

Rhubarb Cream Pie:
8-12(depends how big a slice you want!):
Ingredients:
Pie crust - I had Julie O's beautiful pastry http://www.forumthermomix.com/index.php?topic=2638.0 (not pre-baked)
200g Sugar
50g flour
1 flat teaspoon nutmeg
3 eggs
400g chopped Rhubarb

Preparation:
Preheat oven to 190oC
Put sugar, flour and nutmeg combine at speed 4 and while it's running drop eggs through lid for 15-20 sec.
Add rhubarb and stir on  :-: speed 1 for 15 sec.
Pour into pie crust. I added lattice top as I had left over pastry but not necessary. (If you do add lattice top brush with egg yolk and sprinkle with sugar.)
Bake for 1 hr or until golden.
Serve with lashing of fresh whipped cream!!!  ;)

ellie j - Just back from a night out with friends and I took this pie .... Yummo it was a great hit ..thank you so much , will be making this again for Easter Sunday family lunch.

Chelsea - I made a half batch of this recipe today and it worked well. I used 2 small eggs and substituted the nutmeg for mixed spice which was yummy. I chopped the rhubarb quite small as the cooking time was reduced by 20 minutes. For the pie crust I used Chookie's Belgium Lemon Teacake crust. It filled my smallest pyrex pie plate perfectly and still made enough to serve 8.  Such a lovely recipe Nay.

This got a Thumbs up from us even though hubby and son don't really like capers they still thought sauce was good! I wouldn't have even bothered with this unless dd9 hadn't begged me to make it - she is mad on capers. Much they same procedure as baf65 chicken - meat in top, potatoes in basket and sauce in bottom. Very tasty - made 17 meat balls.  ;)

I must say this was dead easy!!! And fun to use my oven again for a night time meal. It's in the oven as I type so I'll report back with a photo if nothing too disastrous happens.  ;)

I received a document explaining the dangers of buying a TMX overseas from Thermomix Aust. Consider the following if you are contemplating buying off ebay or similar. (I have the original doc that I can email you but the file was too large to attach on here.)  ;)

Points to be aware of if purchasing machines sourced from overseas:
• Is the overseas supplier reliable? There is always a risk. Remember that Thermomix in Australia
sales are covered by the Fair Trading Act and we will abide by these regulations.
• Customers may still be responsible for GST if properly declared.
• Non Australian machines do not come with an Australian plug and lead and modifications
may be required. This should only be done by a qualified electrician.
• Non Thermomix in Australia Customers will not be entitled to receive a Delivery Demo from an
Australian Consultant (at no cost) or receive assistance/advice if needed.
• Non Thermomix in Australia Customers will not be eligible to receive the Host Incentives for
Delivery Demos such as a free ThermoServer or any additional rewards such as ½ price
Bowl and Blade Set that are offered from time to time on purchases.
• Non Thermomix in Australia Customers will not recieve a complimentary Australian Cookbook.
• Non Thermomix in Australia Customers may not receive an Instruction Manual in their native
language or at all.
When buying from overseas, customers should be aware they are responsible for the freight
and insurance costs. While Thermomix in Australia ship in large volumes on pallets and in
containers there are few problems with shipping. Shipping individually could result in situations

Chit Chat / Country Show Winnings - Thanks to TMX and EDC

This is a bit of a brag - Yesterday was The Cooyar Show and we go to show cattle mainly but because it's our local show we enter alot of other stuff too - like cooking, veges and photography. Our whole family had great success yesterday with all entries and I would like to give the EDC a plug because I think it gets a bit of a roasting on here sometimes. My kids entered cooking they did all on their very own using TMX and using some recipes in the EDC. Results as follows:
DS 11 - First Prize for Scones and for Moulded Chocolates
First Prize for Cucumbers
Second - Paraders and Judging (up against the big kids)
First Prize for 'Enlargement' in Photography and this was the adult section!

DD 8 - First Prize for Anzac Biscuits (EDC), Piklets and Moulded Chocolates
Second Prize for Choclate cake (EDC) and Lazy Daisy Cake
Overall winner for Junior Section in Cooking - Won a Beach Towel!

Me - First Prize for Tomato Sauce (EDC)
Second Prize for lemon butter (EDC) and passionfruit butter.

$34 prize money in total and a beach towel! for our efforts. Our heifer and cow also came in with second prize  ;) :D
