Can you have too many muffin recipes on here?? :-)) No - I didn't think so. :D ;)
Plain Muffins
300g Flour
3tsp baking powder
50g sugar
1 egg
250g milk
50g butter
Add all ingredients and mix on speed 4-5 for 15 secs
I used this basic mix to use up some stewed Rhubarb I had in the fridge by putting a tbsp of mix in paper/tin then adding tbsp of rhubarb then topping with more mixture. I also have done this with Rosella jam and worked well too.
Other Variations include:
adding 1 cup of cheese to make Cheese muffins
adding 1/2 cup of chopped dates, craisins, sultans etc for fruit muffins
or adding grated orange rind and 50g of orange juice (reducing milk to 200g) for orange muffins

CC - Made these this morning to take to my weekly morning upholstery class. Thumbs up from all the group Nay-nay. The cheese ones have now been requested by the group.
Carrie - Just made these this morning, with mixed frozen berries. Very yummy. Next time I'll buzz the larger strawberries up a bit first maybe... they're quite chunky in the mix but then it does go lovely and gooey where they are so maybe not! A little bit of jam in the mix before the berries would have been nice too, to give the mixture a nice flavour too. Thanks for the recipe Nay!
Made these again today with a banana and 40g choc chips. DS will love them.
Nay-nay - Mmmm.....just tried reducing milk to 150g and added 100g of cranberry juice and a couple handfulls of dried cranberries.....Yummy! I have done coconut before and I just added about 60g and a tbsp of coconut oil so just add in your coconut and see what the mix looks like to you and add a little milk if you think.
BZB - Choc chips & raisins for my little man. Added raspberries for his big bros. Turned out quite dry. Prefer CreamPuff's posting for muffins.

Thanks for this basic recipe Nay-Nay. I just tried converting my basic muffin recipe from my Australian Women's Weekly cookbook. It has much more butter/sugar than this one - so will definitely be trying this one next.
If I was to add coconut (as we love lemon/coconut muffins) how much would you suggest so it doesn't make the mix too dry? Or would you increase the milk?

Yes I have done coconut before and I just added about 60g and a tbsp of coconut oil. It sounds like you have a good idea what consistency makes a good mix so just add in your coconut and see what the mix looks like to you and add a little milk if you think. ;)
