I made this today, used orange juice as half the quantity of water plus the zest of the orange as well.  I didn't add the horseradish and reduced the sugar to 170g. I didn't read the recipe correctly and added the red wine vinegar at the beginning of the recipe.  I think my onion and beetroot quantities were slightly under weight which may be the reason my relish was a bit runny.  I cooked it a further 5 mins on varoma with the MC off to achieve the consistency I wanted.  I won't chop the beetroot for quite as long next time either but yes, I did enjoy it on cheese and crackers.  Some relishes I've made have been too thick but this one will be great on my corned beef sandwiches and hamburgers.
It made 3 jars.

It sounds brilliant Judy. Does the taste of the orange come through much please?

I might have to try this as I was given some fresh beetroot today.

Not that I can taste cookie.  I tossed up as to whether I'd do this recipe or another one with the orange in it then decided to just sub the water for the OJ.  It was a small orange so there was probably only 50g juice which I topped up with water.

We love Beetroot Relish. I use it in burgers and sandwiches instead of beetroot.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.
