Title: Lemon Feather Cake (no flour)

6 eggs,  not fresh and at room temp.
275 castor sug.
zest and juice of 1 lemon
150g potato flour
a little extra flour and sugar mixed together

Filling
300g cream 225g lemon butter

method
Separate eggs.
Insert  butterfly
Beat egg whites 5 mins. on speed 4
Set aside in large bowl and remove butterfly
Zap sugar with lemon rind 30 secs. at speed 7,  scrape down bowl, and zap for 15 secs. on speed 7.
Put in butterfly nd add yolks and lemon juice , beat until creamy and thick, speed 4 for 5 mins .   scrape down bowl half way through.
Add flour through Jam funnel in top, (prevents some of the mess),Speed 2 for 1 min.
Add 1/4 of the whites and mix speed 1 1/2 for 30 sec.
Tip mixture over egg whites in bowl and gently fold mixture through. (  If  there is any liquid egg white in the bottom of basin either tip it out or beat with a hand beater and add to mixture.
Pour into prepared pan.
pan
23 cm, sprayed and lined.  then sprayed again and dusted with the extra sug. and potato flour mix.
  
Bake at 150 for 50 mins, or until cooked.
cool on wire rack.   When cool split and fill with cream that has been whipped and had the lemon butter folded through.
Can be made and filled the day before needed and kept in a sealed container in fridge.
Variations-
Passionfruit
lime or orange
Rose water icing and cake cooked with rose geranium leaves cook.ed
 at the bottom of the cake
Rum and chocolate filling in a plain cake, rum and chocolate icing.

Sound really interesting Chookie. My MIL loves cakes but as she is such a good cook herself, I try to make things that are a little "different". Thank you  ;D

This looks lovely and lemony Chookie. My family would love it. I think I will make it when brother comes over from Canberra at Christmas.  He LOVES lemon butter type things.

Cookie1, I've got another lemon cake (more like a tart ),  called Belgium Lemon Teacake.   Will convert and test when I have a moment. (  Off to Melb. tomorrow to baby sit Oscar   Could be away for the rest of the week. ) This one has a crust top and bottom with lemon butter in the middle.   Looks like a good one to make and freeze, or send home with brother !

Oooooh the lemon teacake sounds lovely. yes please! When you get a chance! ;) Have bought a new fancy pie dish, can't wait to try it out ;) ;)

Hi Cookie1  1 left handed,  exteacher to another !  I don't think flour would work.   Corn flour might as it has a similar texture to potato flour.      What is the problem with Potato flour ?

The potato flour is in the supermarkets with all the other flours.  Don't need to go the specialty shops now.

I made this today Chookie, and it sure does rise.  I couldn't get any potato flour so I used cornflour. I'm afraid I woosed out on beating the egg whites in the TMX. While the eggs and sugar were beating I did the egg whites with an electric beater. I had intended to do them on the TMX but time was against me today and I needed the cake for tomorrow.
Everything else was done as you said on the TMX.
I haven't tasted it but it looks amazing.

Cookie   1                   Really glad you liked the Lemon Feather Cake,  it keeps very well in a closed container in the fridge.    Handy to know that the cornflour works.   I gave the recipe to a local cafe and they make a passionfruit sponge .

That was the practise one TMXer that DD took to work. The next one I'm telling him he has to nurse all the way home.

DD's co workers loved the cake Chookie. One doctor is a Vegan so DD explained that it had lots of eggs etc. The doctor declared "it doesn't matter what's in cake, I'll eat it!"

What difference does the freshness of the eggs make? I only have laid yesterday eggs.

Probably not a lot.  If you can,  leave the egg whites on the kitchen bench for a couple of hours.  They will whip better.   Love this cake,  think I will make it for Easter and decorate it with eggs.

Trudy,  this cake is so easy and yet so festive.  If I want to make a cake for a special occasion,  this is the one I make.
Two things,  you need lemon butter and potato flour.

I am going to make this tomorrow. It sounds delicious, plus I have a bag of potato flour in the cupboard that I'd like to find a use for.

Any good lemon butter recipes?

DH wants me to make it dairy free, but I think I'll try the original first!

Help please!

Once cooked, the cake was layered - at the bottom was like a rubbery baked custard and at the top was spongy egg whitey cake. What did I do wrong?

I think you didn't fold the egg whites in enough.  Possibly they weren't stiff enough.

It might be that they weren't folded in enough - I was worried about deflating them. They were pretty stiff though. I'll try again when I have enough eggs :) chooks are not laying well at the moment.

P,  my chooks are not laying well either.  Always happens about Easter.   
I had another look at the recipe,( even though I made it a few weeks ago for friends) and remembered that when you whip with the TMX, you can end up with. Some liquid egg white at the end.  Best to discard this.  Hope this helps.

bumping! :)  Love to try this soon but only have really fresh eggs at the moment.  Will wait a couple of days - chooks are laying well now after the moult ;D

GF,  I was talking to a friend about this recipe yesterday.   We both think the filled cake improves with keeping in the fridge for a day or so.
