Name of Recipe: Banana/avocado ice-cream from cdkitchen.com website
Number of People: 5 serves
Ingredients:
2 large well ripened bananas
2 soft avocados
3 tblspns lemon juice
1/4 cup heavy cream (sorry, forgot to weigh it)
Preparation:
Peel bananas and avocados and cut into 3cm chunks. Mash the avocado and place that and the banana pieces into a container or ziplock bag and drizzle with the lemon juice - mix well. Freeze for 2-3 hours. Place into the TM bowl, breaking up the mass - it won't be totally frozen. Add the cream and mix for 30-40 seconds on speed 8 to puree. Use spatula to assist in this process. Serve immediately.

Tips/Hints:
I ate one serving immediately and poured the remainder into 4 silicon muffin shapes. Because of it's lovely green colour, the kids should love it. Great for using up over ripe bananas and avocados.
As I thought, this ice-cream set as hard as a rock in the freezer. I left 1 piece out on the sink to have later and forgot all about it for 2 hours. It still had ice-cream consistency though and a quick stir was all it needed.

Tebasile - I make banana avocado ice-cream with the frozen fruit and skip the cream. Or change to chocolate ice-cream with some cocoa powder.
containergirl - A truly divine combination.
I often do a version of this without the cream - I use a tablespoon of coconut oil. I also add some lemon zest and use a bit of honey or agave in the mix and a splodge of vanilla.
If there are no lemons around I substitute with limes (which a friend almost always has on her tree).
To make a 'cheesecake' with it. I make a base with ground nuts (generally macadamias), and a couple of dates. I then press this into small containers and fill with the avocado topping. Spanner snorts when he hears me refer to this as 'cheesecake' but it is so sustaining to keep a supply in the freezer when I need a 'little something sweet'.

I loved it ceejay and DH, who doesn't like avocados, had a spoonful and he even liked it. It is so smooth. I don't know how the frozen lot will go - probably need to let it sit out of the freezer for a while before serving but I will get back to you on that one. My avocados weren't over ripe so I imagine the flavour would be more predominant if they were (as they should be but I couldn't wait any longer) but I could taste both the banana and the avocado.

Ha ha - I have a recipe for chocolate avocado pudding, but I've never made avocado ice-cream... must look into it. We used to buy it at the gelato shop when we were kids, and it was delicious - so creamy!!

Probably would ILB ;) ;) If only I could take pics Ceejay - I have a friend coming down from Qld for a wedding this weekend and she is hoping to catch up with me and see if she can do something with the shots on the camera and the computer. Whether we can find a day to suit us both though is the problem before she heads off again and I'm sure it would take more than one lesson to teach me anything :P :P
