Hi Thermomixer.... Actually I live in London, UK, although I am from Brooklyn. So my Thermomix works fine here.  :)

My sister's friend from New Jersey had a TM21(I never used it) and it didn't seem a problem. She cooked up some wonderful dishes. I will ask her for some recipes so I can post here.  8)

Marichu, I wish I had. I used to work a block down from there. I might make a visit at Christmas for some nice Tapas. If you want me to send some American Chicken Drumsticks via Fed Ex, just ask  ;D

Hi Thermomixer...

I got the flan mixure from the local store. We can get it anywhere here. You should find them next to the jelly powder section. I think it is also known as Creme Caramel mixture.

Hope you can find it....

Seafood and Fish / Sweet Seafood Salad

Name of Recipe: Sweet Seafood Salad
Number of People: 4
Ingredients:

200 grams fish per serving consisting of combo of;
Tasmanian salmon fillet (or Atlantic, depending on your locale!)
prawns
scallops, roe on
white fish fillet of choice
Sliced red onion (3 or 4 slivers per serving)
Fresh baby spinach or salad greens of choice

Dressing:
generous handful of coriander (cilantro)
1/4 cup olive oil
1 green chilli
2 tablespoons sweet chilli sauce (bought Thai variety)
1/4 cup fish sauce
zest and juice of 2 oranges
zest and juice of 2 lemons
4 spring onions
dash of rice wine vinegar
salt to taste
sugar to taste


Preparation:

Chop all fish fillets into square chunks.
Place all seafood in ceramic dish and process in Steam Oven for 20-25 minutes until cooked.
Cool slightly.
Meanwhile make dressing by placing all ingredients into bowl of Thermomix and whizzing together on Speed 4 until just combined. (Don’t overmix or you will get an emulsion rather than a dressing.)
Dress each plate with salad greens
Add steamed seafood
Add red onion
Drizzle with dressing and serve with lemon wedges

Name of Recipe: Naan Bread
Number of People:
Ingredients:

1 egg lightly beaten
2 tablespoons olive oil (can use ghee to be authentic)
3/4 cup Greek style plain yoghurt
4 cups plain flour
2 teaspoons instant yeast granules
1/2 teaspoon baking powder
1 teaspoon sugar
1/2 teaspoon salt
1 cup warmed milk

Preparation:

In small bowl combine egg, oil and yoghurt.
Put flour, salt, sugar, baking powder into the Thermomix bowl.
Add yoghurt mixture and warm milk.
Using kneading function, knead for 3 minutes.
Add more warm milk if the dough does not come together.
Place into a large oiled bowl, cover tightly with plastic wrap and leave to rise for up to 2 hours.
Preheat Pizza stone on Cross Fire BBQ with hood down until temp shows at least 200 degrees celcius.
Turn dough onto floured surface and knead by hand until smooth.
Divide dough equally…about 100 grams per portion.
Roll out to 1/2 cm thickness. Stretch by hand into a tear shape.
Place onto hot Pizza stone for approx 5-8 minutes.
You should not have to turn them over.
Serve immediately with toppings of choice.

Name of Recipe:Chicken Cacciatore
Number of People: 5-6
Ingredients:

½ Onion, peeled and halved
1 clove Garlic
Basil and Parsley to taste
40g Olive Oil
6-8 Chicken Drumsticks - skin removed
1 can Crushed Tomatoes
1 MC White Wine
1 tbsp TM Vegetable Stock Concentrate
Salt and Pepper to taste
½ Red or Green Capsicum, diced
Handful chopped Mushrooms
Handful Black Olives

Preparation:

Place onion, garlic, basil and parsley into TM bowl and chop for 5 seconds on speed 7.

Add oil and sauté for 2 minutes at 100ºC on speed 1.

Add drumsticks and assemble around knives and sauté for 4-5 minutes at 100ºC on Reverse + speed soft.

Add tomatoes, wine,water, stock, salt and pepper and cook for 30 minutes at 100ºC on Reverse + speed soft. Halfway through cooking time add capsicum, mushroom and olives.

Thermomixer - I tried making this when it first appeared on the TMX Aust website but had problems with the drumsticks slipping so placed the butterfly in and it works better (for me) that way.

leo081977 - This was my first meal in the TMX and it was DIVINE, thank you for the recipe...though I used thighs instead of drums and it worked a treat (didn't take as long to cook either). Sauce was a touch runny though...any idea how to combat that???

ILB - You could add a little corn flour 5 minutes before it finishes cooking or take the MC off and put the little steaming basket on the top so it can evaporate a little...

Thermomixer - You could also try putting in the Thermoserver and serve it with pasta or rice as per the original recipe from Thermomix Australia site.  What NYmixer from London, who uses American drumsticks, also didn't say was that you can steam veg in the varoma at the same time.  By using varoma temp you will reduce the moisture.

leo081977 - Thanks for that idea, it was PERFECT!!!! I replaced the tin of tomatoes with 2 fresh tomatoes, buzzed them up, and threw them in together at the normal spot, didn't add the wine at all and added a HUGE amount of herbs at the start!!! Was much thicker and much yummier too. I added a touch of cornflour near the end too. I also used boneless thighs instead of drums.

Carrie - I made this with drumsticks, it was delicious. Not sure why the 5th step says to add water? There's no water in the ingredients list? I didn't add any and it certainly didn't need any, I thickened it with cornflour at the end as it was.


JD - I have removed the water, it's obviously not necessary.

Name of Recipe:
Coffee Pudding
Number of people:6

Ingredients:

1 liter whipping cream
1 package of Flan for 1 liter
1 cup of coffee (250ml)
5 tablespoons sugar

Preparation:

1. Make the coffee at your regular coffee machine;
2. Insert the cream in the Thermomix and program 13 minutes, 100ºC, speed and half;
3. While the cream is being heated in the Thermomix pour the coffee into an empty glass and dissolve the sugar in it;
4. When missing 6 minutes to finish in the Thermomix pour the coffee into it through the mouthpiece;
5. Right away pour gently into the Thermomix the package of Royal Flan;
6. We wait to complete the remaining minutes or when we see that it is boiling and begins to expand we stop and it's ready.
7. Once completed, pour in a clear glass bowl or strong plastic tupperware, and allow to stand without moving the container, so it curdles right as you see in the picture.


Tips:

Make sure you don't go to bed too soon after you eat this wonder desert!!!!

Vegetarian / Rice with swiss chard

Name of Recipe: Rice with swiss chard
Number of People: 4-6
Ingredients:

150 gr swiss chard
100 gr potato
100 gr carrot
100 gr olive oil (I put 50 gr)
100 gr white beans cooked
1 tsp paprika
200 gr rice
1 litre water
Salt


Preparation:

Put in the Thermomix blender the chard, potato and carrot, in that order. Chop during 4 sg v4 each, adding one after another. After that add the olive oil and 5 min Varoma temperature. When it’s about to finish (the time) add the pimenton. Add the water and salt, 20 min varoma temp, spoon velocity. When its all done check out the salt and cook for 15 min the rice (25 min if its brown), 100C spoon velocity. When 10 min are left add the beans. Let it rest 2 min and eat!
