Coconut and Curry Sauce (Spanish recipe)

Name of Recipe:  Salsa de Coco y Curri (Coconut and Curry Sauce) – not tested

Serves:  Not stated

Ingredients:
3 egg yolks
200g milk
50g coconut milk
Pinch of salt
Pinch of pepper
1 tsp curry powder
1 tsp flour
1 tsp butter
A pinch of nutmeg

Preparation
Place all of the ingredients in the  *:.
Blend 4 minutes / 80° / Speed 4.
Serve hot.

Tips/Hints:  Curry sauce is one of the most popular in India.  It is very aromatic, but mild.  If you prefer more flavour add more curry powder or pepper.  It accompanies all kinds of meat, especially pork, but also chicken, lamb and turkey.  It is exquisite with fish, pulses and vegetables.

Origin:  This is a translation of a recipe in Salsas y Aliños con Thermomix (Susaeta Ediciones)

If it's got coconut milk in it, it must be good! That's the rule in this house.

Has anyone tried this curry yet? Sounds yummy. Did you think it would go well with crayfish?

Made this sauce to go with some crayfish and it was really nice. Will Definitly be making again. The only thing I changed is I added a little extra flour to make the sauce thicker. But it really would depend on what your using the sauce for if you need to thicken or not. I give this recipe 5/5. Yum.

Hi dede, glad you liked it.  I agree, the flour quantity doesn't look much and whilst I don't like sauces too thick (DH's are so thick, a spoon would stand up in them) I don't like 'em too thin either.

And I really think that the thickness of the sauce would depend on the dish you used it for. I was thinking this curry would go wonderfully with scallops to make scallop pies and you would need a thicker sauce for that. But if I had a curry chicken say with rice I would want a thinner sauce to soak through the rice. I do love a coconut curry sauce.
