Hi Sparkle

There are probably a couple of possibilities as to why.
1. Cakes hate to be over beaten.  Given the speed of the TM I would suggest that 3 mins on Sp 8 is quite a long time.  I think I'd halve that.
2. I would use SR flour, as the plain flour, butter milk and sugar are all heavy ingredients and 1 tsp of baking powder is possibly not enough.
3. The oven temperature wasn't on the right temp or there was a fluctuation of some kind.
I tend to think the last one is a bit of an excuse

The 4 ingredients books never seem healthy to me because of all the processed ingredients used.  I make the pumpkin soup from the EDC all the time using just onion, butternut pumpkin, stock and water.  Sometimes adding seasoning depending on my stock.
I also do a similar on with cauliflower, stock, water and a tsp of curry powder. 
Will get my thinking cap on for more recipes.Great challenge!

Certainly are questions from potential buyers out there about this amchine.  I have had a couple this week alone.  Interesting to see what will come of it  :)
