Cup-of-Avocado Soup

Name of Recipe: Cup of avocado soup
Number of People: 6 cups

Ingredients:

2 large ripe avocados (yield approx. 200g - 250g of flesh), roughly chopped
2 cloves confit garlic
1 litre liquid chicken stock - I used a bought carton
1 umami cube (use a tspn chicken stock powder if you don't have umami on hand)
250mls cream
S & P to taste
handful chopped coriander, leaves and roots (You could use parsley or chives if you don't like coriander)

Place the chopped avocado and cloves of garlic into the TM bowl and chop 3 sec/speed 7.

Add the chicken stock, umami cube and cream and cook 10 mins/90o/speed 2.

Test for seasoning before adding ground pepper, salt and the coriander.


This is a great way to use up very ripe avocados as long as they haven't gone brown.  It's a very thin soup, hence drinking it from a mug in front of the fire on a cold winter day.  I imagine you could drink it cold too but I am not keen on the idea of a cold soup.

Would you believe I bought 3 avocados for $2 the other day and only have half of one left. I will have to wait until they are cheap again as I like the sound of this soup.
May all dairy items in your fridge be of questionable vintage.
