Title: Almond Jam Cookies

Almond Jam Cookies
Makes about 30

Ingredients
185g softened butter
1 teaspoon vanilla
165g caster sugar
2 egg yolks
 60g almond meal
225g plain flour
½ teaspoon baking powder
jam - I used quince but any flavour will do

Preparation
If using TMX to make almond meal do so first. Then set aside.
Place butter, vanilla, sugar and egg yolks into the bowl. Mix on speed 3 until they are JUST combined.
Add almond meal, flour and baking powder. Mix on about speed 4 until it is all combined.
Roll a  teaspoon or a little more of mix into a ball and place on a tray.
Use a wooden spoon end dipped in flour to make a hole in the centre of each ball of mix.
Put jam into the centre of each.
Cook at 1600 for about 20-25 minutes.
Cool on trays.

This recipe is adapted from a Women's weekly recipe book.
It is an oldie but a goodie.

JulieO - Cookie these are great!  Mine are speckled because I used unskinned almonds when making the meal, I will reduce the sugar slightly next time because I think I can get away with it and I got 32 out of the mix.  So good with a cuppa, thanks for a great, simple recipe.  Did you add the jam after they were baked? Mine melted into the biscuit during baking, which doesn't really matter still tasted great.

Cookie - I added my jam before I cooked them but you can always top up the jam afterwards if you need to.

CP - these are lovely cookie, and I made half with apricot and the other half with raspberry jam. The almond meal gives it a nice consistency. 5/5

patsycate - Made these today - filled with homemade TMX strawberry jam - and they're delightful! The recipe is spot-on and the dough is very easy to work with.  I love the slightly almond flavour; makes them stand apart from any store-bought ones. If anyone's making them for the first time my only hint would be to make sure they're well-spaced on the baking tray - space them well apart on two trays - as I was surprised how much they spread.  Mine ended up touching each other, which was fine as they came apart easily, however the presentation would be nicer if they were in their own rounds. Thank you for the recipe - this is definitely going in the 'make again' pile!

will make these cookie as I spotted some almond meal as i was cleaning out the pantry. was surprised that those pantry moths hadn't spotted it before me...

We love them. DH prefers biscuits to cakes.  Yesterdays batch are almost gone. I am in the process of making CP63's Turkish Apple Rolls.

I'm glad you liked them Julie. Mine also have speckles as I don't skin the almonds before I make the almond meal. Healthier all round.
I added my jam before I cooked them, but you can always top up the jam afterwards if you need to.

Yum, thank you. DS loves jam drops, the almond meal will sneak a bit more goodness into him. :D

Made these yesterday and I would rate this recipe 7/5 ;)
They have been absolutely gorgeous, my 16mo loved them and also got praises for it from neighbours,
would be a regular for sure..

Thanks cookie for the recipe!!!
The only twaek I had done was to reduce the sugar , put in 110g and put in extra 50g of Almond meal to compensiate the weight :)
