Congratulations Chelsea. My mum made the best sponges ever, so light and airy and so big. Even tho I use her recipe I can never get them to be like hers and yet my daughter is able to do them just like her nanna. Beats me.

Made this meat pie today using the rough puff pastry from meganjane. It should really be in the oops folder as I added too much water. DH came in and wanted something and I forgot that I was only making half quantity and put in the full amount of water. It rolled out nicely after adding a bit more flour. I am expecting two of my DGD's next week, plus a third one for a sleep over at some stage. I've been trying to get a couple of things in the freezer for a head start. So far a large lasagne, pizza bases and the pie. Not sure what else to do yet.

Made JulieO's cob loaf (baked in a 8" cake tin) this morning and a batch of Apricot, Cranberry & Pistachio Truffles from a recipe my DIL found in a recent magazine. Because I had the bread rising in the TMX I used my old food processor to chop up the dates etc and it was a disaster so had to wait until the bread was out before I could continue with the truffles. I have decided I need 2 jugs. DH just rolled his eyes when I told him this and hurried from the kitchen lest I get any more ideas.

I have a question for all you experts. I have the Thai Chilli Chicken & Basil on cooking at the moment and I still have half a can of coconut milk left over. Does anyone know if it will freeze or if not what can I do with it, any suggestions please?

BBQ tonight as it's too hot to cook. The heat & I don't really get along together very well. I made potato salad this morning, did it the old way as I haven't tried it in the TMX yet. Also made chookies 2 second salad with a few extras. Omitted the radishes (don't like them) and added a couple of spring onions, a small handful of pecans plus some left over cooked peas.

I made achookwoman's quiche for our evening meal. My cupboards are a bit bare at the moment and I didn't have cream so used a small tub or ricotta that was in the fridge then discovered after the quiche was cooked that I had forgotten to add the flour. It smells yummy and looks ok but I guess the proof will be in the tasting. Probably a bit cheesy but I can live with that.

Love your cake Maddy, it looks delicious. I'm a chocoholic from way back and anything chocolate makes me drool. I went to a demo this week and it was great and have booked in for a steamer demo in the new year. I'm looking forward to seeing what you can do with the veroma. Made some pistachio & cranberry shortbread today - recipe from the demo. It taste great
