Title: Crisp batter for Fish.
Post by: achookwoman on August 18, 2012, 09:18:42 am
I have used this recipe for years.  It makes a crisp brown batter and is perfect for fish. The secret is to have a thin batter and to cook in hot oil.  I use Rice Bran oil as it has no flavor and can be heated to a high temperature without burning.

200g plain flour
1 teaspoon of Carb soda
1 teaspoon of salt 1/2 teaspoon of white pepper
300/310 mls of cold water or soda water.

Place all in TMX bowl and mix for 10 seconds /  speed 5.
Pour into a flat dish and keep in fridge for 30 mins
Dust fish with flour, dip into batter and fry in hot oil.
Remove when cooked on both sides,  and place on hand towel.

To test that oil is hot enough, drop a small blob of batter into hot oil.  It should sizzle immediately.

Chips.
Cut chips to required size.
Microwave and then cool
Heat oil until very hot, ( I use a WOK )
Cook chips until brown and crisp. Don't turn until first side is brown.
Drain on hand towel

If I forget I will have to rush into Denham, 24 km away. Although someone will have some in the camp I'm sure.

Yummy, Obbie!

Does the oil splatter? I'm paralysed with fear when that happens. Totally wimpy :(

BZB I am the same. I even have trouble with stir fries. A complete wimp here too.  :D

Cookie, I turn the fire low when I know something would splatter. It's harder to achieve desired results, but it's better than me constantly yelling in pain. Haha

I make sure the fish is dry before I start.  It is the water that makes the oil spit.  Place fish on hand towel and pat it to remove excess moisture.

One of the benefits of a deep fryer is that the temperature is controlled and you close the lid whist it cooks so no spitting or spills. I much prefer this to a pot or wok of boiling oil!

I'm the same bonsai - I love my deep fryer

I have put off buying a deep fryer as I might be tempted to do more deep frying.

I've managed to resist getting a deep fryer so far. Just like Chookie, to avoid temptation of making loads of deep fried food. Plus the thought of using so much oil and chucking it after cooking...eeks!

Thinking of the Philips Air Fryer instead. Hahaha. Not cheap though :(

Peter,  depends on how many chips.  You want them par cooked and then let them get cold,  before cooking them in hot oil until brown.

Peter,

I make potato omelette regularly. After dicing 2 potatoes, I whack the cubes on a plate. 2 mins on high. Stir. Another 2 mins In microwave. Then I fry. Takes a shorter time to fry the potatoes that way.

DH got a nice little catch of herring yesterday morning and he made this batter up for the fillets for dinner. He wanted to go with the standard dip in egg and roll in flour but I put my foot down and said "No this is one of chookie's recipes - it must be good - just make it!"  Well the fish were bee-u-ti-ful. Nice and crispy, and definitely much better than 'the other way' . Thanks chookie for another great recipe x

Very timely - my brother in law has just caught some beautiful fish and frozen for me as I can't pick them up for a few days.  He did tell me that it would be nice battered.  Have saved this to use soon.

Does anyone know if this would work with gf flour?  :)

I have made this using cornflour which worked well and made a light tasty batter.
Make sure you get pure corn flour as some is made with wheat.
I use white wings corn flour.
Good luck it is a nice batter.
